Thank you once again for your awesome sharing~!! I just wanted to verify: Shio-Koji lasts for one month In the fridge? and how long does shoyu-Koji and amazake-koji lasts in the fridge?

Thank you! Yes shio-koji and shoyu-koji would last for about a month in the fridge (or longer in the freezer..). With amazake, you should try to finish in a week or so and freeze whatever you couldn’t use up😊

Hahaha yes cheese is definitely hard to give up for many people! Now, the Italian restaurant I always go to with my husband makes pizza half and half for us - half with cheese for my husband and half without cheese for me😆 one step at a time, no worries! You do the best you can👍
