You would be very happy trying Bolas de Berlin. Super fluffly and with and amazing cream inside. I think that we in Portugal have amazing pastries.

@@jeremylam6060 No he didn´t he made Portuguese laminated pastry, which is different from the French puff pastry and is the one traditionally used for pasteis de nata. Source: I´m Portuguese, go to school with a pastry class( not a member of it, but have access to basic manuals from the school website, and they detail how to make all sorts of pastry.)

Food history! The Hong Kong version evolved from the Portuguese version. I had a friend from Hong Kong in college and we regularly nerded out about this :)

@Joe S The Portuguese version originates from Catholic monks in Belém (an area of Lisbon east of the city centre) sometime in the 17th century. I think there are other versions that date back farther, but that's the origin of that particular version. I highly recommend eating your way through the cafes of Lisbon, incidentally, assuming we can travel again someday. The baked goods are incredible,. and the espresso rivals what you can get in Italy.

When the show was imported to the US they were forced to change the name because Pillsbury copyrighted the phrase “Bake-Off.” So tl;dr, blame the doughboy

I live in the US, but since I grew up with Asian parents, I’m used to metric. Metric is actually based off of powers of 10 and not random numbers.

If you’re ever looking for inspiration, I imagine making the Air Nomad’s fruit cakes (from the scene with Gyatso and Aang) might be a welcome challenge! (The air-bending swoosh of the filling might be hard to recreate, though.) In Hong Kong cuisine, egg tarts with fluted crusts are Hong Kong-style, whereas egg tarts with smooth crusts are Portuguese-style. Love both!

0:28 Not to be too pedantic, but since we are all learning together I want to point out this is a Portuguese tart or a tarte de nata, which is popular in Macau (former Portuguese colony) but not Hong Kong (former English colony). Hong Kong-style egg tarts have shortcrust-like pastry and unburnt custard.

So I just tried making this dish. It's the first time I've ever baked and it turned out superb. I cannot believe how well the crush turned out considering that it looked a complete mess going into the oven. The custard is flavorful and delicious, and the crust is flaky and crispy. Thanks so much for doing this show. I've made a number of dishes after watching your videos and none of them have turned out as well as this. But it's been a lot of fun trying different recipes. This was awesome.

He made these Hong Kong style, they typically don't add powdered sugar or cinnamon, just the egg tart as it is.

I’m Portuguese and I love making these. A trick to make it easier to spread the dough into the tin is to let it warm up slightly before you start pressing. Cold dough is good for when you are cutting it into pieces. Cut all of them and place them in the tin cut side down, give it a couple minutes and then start pressing into shape. It should make it easier.
