Despite being a fabricated entity, composed only of Tony Stark's code and some rare/non-existent elements, the Marvel demigod known as Vision sure knows how to whip up some mean paprikash. That is, if he actually used paprika, as opposed to some other misplaced bright-red pantry-mainstay. Gear up for Avengers: Infinity War this week as we delve into this classic Sokovian (actually Hungarian) comfort food.

I am hungarian and the first time I ever make parikash, I get the recipe from an american KZbinr who gets the recipe from a Marvel movie which depicts a fictional country that is based on Hungary where the details are on a paper that is held by a character that doesn't even have a nationality or race. Welcome to 2020.

@@JohnDoe-xo2yf I'm pretty sure it's very much a mix of several countries in the area, just to make it a bit more believable to US readers/viewers (I don't think many of them know whether Sokovia is more real than Moldova, North Macedonia, Slovenia or any other similar sounding name).

I've never bought straight paprika at any grocery store. Closest I've come is Old Bay, which has paprika in it.

@@DarDarBinks1986 you gotta buy some straight paprika. Best taco seasoning I've ever had contains: lots of chili powder, a moderate amount of salt, garlic powder, and cumin, and a small amount of paprika. You can adjust the amounts to fit what you think tastes good, sometimes I'll add some cayenne pepper because I like it spicy.

I am Slovenian with a Hungarian mother. And this is surprisingly spot on as we always make it. The only difference is that we eat it more like a soup thingy. Cheers Babish!

@@GaboBaltuano As it happens I did work as a chef with two hungarian fellows some 5 years ago! :) That depends SOO much on the type of paprika. Our "hordosch" paprika would very much be spicy, but the Slovenian one not so much. I'd go with a little less and/or smoked paprika. But I've been eating hot peppers since I was a young lad! :) Best of luck!

@@GaboBaltuano You can get paprika which is absolutely not hot. It's just a sweet paprika powder. Usually paprikás is not a hot dish at all, but you can have additional seasoning which makes it so.

@@GaboBaltuano Chiming in: If you're American, odds are no, it won't be spicy in the slightest. We have a pretty...poor paprika culture in this country. Unless you go well out of your war to a proper spice outlet, odds are the only type of paprika you're going to find in your supermarket is the bog standard, and largely flavorless sweet paprika. And that's sad because there's a whole world of paprika out there we're missing out on. If you want to infuse some spicinss into the dish, you'd be well advised to turn to a few pinches of cayenne pepper.

Kosher (coarse) salt is only needed when sprinkling on top and eating directly where the large crystals crunch and explode with flavor in your mouth. It isn't needed when adding to a liquid or sauce because it will just dissolve anyway and be no different than regular salt.

b minor This is not true. Iodized salt has a much higher sodium content than regular kosher salt and is much more dense. If a recipe calls for a tablespoon of kosher salt and you put in iodized it will be way too salty.

+Jake MacTosh - being iodized has nothing to do with the coarseness of the salt. You can get non-iodized fine grind salt also. Being iodized is only an issue when doing things like pickling and curing, where it can affect the fermentation. Yes, a teaspoon of coarse salt is more NaCl than finely ground, but that can be easily accounted for by weighing instead of using volumes. Again, the purpose of using coarse salt is it is easier to pinch and sprinkle on foods, increased mouth experience due to crunchiness and flavor explosion, 'koshering' and other types of 'rubs' that you want to coat the outside without it absorbing as easily, rims of Margarita glasses etc. When used by weight, there is absolutely no difference in taste when it is put into something where it just dissolves.

The way my mom does papricash is adds the sour cream to the sauce, to make it more creamy and velvety and stick to the pasta/dumplings better.

Is it pretty authentic? I'm from Croatia and we've always made a stew or soup sort of thing, meaning there's a lot more liquid and fewer dumplings, and there are potatoes and carrots in as well. We don't serve it as a pasta dish, it goes in a bowl. Like fish paprikash... but with chicken, etc.

Every region in Hungary make them differently, every family has their own version that is slightly different from even their neighbors. I think this is pretty authentic, although where I am from we make them differently.

My Hungarian neighbor used to make it just like that. Never had another paprikash that was even in the same league. She would put it in the oven. Then take the chicken out of the pan and reduce the sauce, adding sour cream at the end. So good.

Dude, you made me cry. I'm not Hungarian, but I have a deep love of Hungarian culture and have visited there many times. I like your other videos, but this was the episode where I was able to see from experience that you not only took the time to make the traditional dumplings to go with it, you shared the warm feeling that you get when someone makes this for you. It shows a lot of respect for the culture, and you made me miss it all over again. Luckily, you also inspired me to make this dish again at home!

Gordon Ramsay's instructions: olive oil in pan. Add a touch of olive oil. Season with salt and pepper, and just a touch of olive oil. Pour in a beautiful cup of water, and freeze. In a few hours, remove, garnish with olive oil, and serve. Captain America's Ice... done.

@@TKZells16 A pinch is the amount you can pick up by putting your thumb, index finger, and middle finger together in a triangle. I do not know how many grams it is, but that is the definition I learned from cookbooks and cooking shows.

Mate! Im so Happy to see You`ve chosen a granny`s dish from my country! Been executed well, the difference is We don`t use butter in our savory dishes! Originally pork lard or if you are fancy, beef lard. All the "ancient" recipes on the country sides, in the dusty cupboards like this for 4 people aprox. 2 tablespoon of lard and the quantity of onion is normally has to be the same, like the meet. The longer and slower you cook the onion, the richer your sauce gonna be. The particules of the onion thickens normally your stew, so cook absolutely the sh*t out of them!

Here's a trick, put the dumpling batter into a piping back and squeeze it out constantly into the pot while using a butter knife to slice away at the tip of the piping bag, cutting apart the batter into individual pieces as it goes into the water. It's alot faster and easier that way.

Even though my Hungarian grandma lost the language, she still remembers all the old family recipes and her top 3 have always been Cabbage Stew (that the whole family lovingly refers to as “cabbage roll slop”), Beef Stew (god in a bowl), and Chicken Paprikash (also hellishly delicious) I’m pretty sure that you won’t look this far back into your videos but it can’t hurt to suggest that you might do a Hungarian Grandma Special Episode of BWB wherein you do all those delicious comfort food recipes from the old country 😊🇭🇺

I just made this using chicken thighs and bell peppers. Also let the sauce thicken and stirred the sour cream into the sauce when it was done. Also just made some buttered noodles with it instead (no time to make spaetzle). This was beyond amazing but now I need a nap. Thank you, sir.

My only advice from my Czech grandparents' advice is make the dumplings a little stiff, slap the dough on a kitchen plate and scrape them from the plate into the boiling water. Very fast and you can make whatever size dumplings you want and it's lovely.

This looks good. My Mother in Law made it differently, she didn’t put the peppers in hers and she put seasoning salt and paprika on her chicken when frying it in a kettle. I have her recipe from her when I watched her make it. I wrote it down to keep it in my family. I might make this. ❤️

Awesome video, thanks for it, gave me couple of ideas :) Just a bit correction: I know you didn't state that, but this isn't hungarian chicken paprikás, but chicken stew. Paprikás usually has a flour + sour cream (also more like "tejföl", a bit different) thickening.

Pretty true to form with two exceptions. Any version of this I have seen only uses thighs and drums and normally the sauce is reduced and sour cream is added to thicken before serving (at least that's how my Hungarian grandparents always did it). I'm used to seeing this served over spaetzle and have read that in some regions of Hungary it's served over mashed potatoes. Props for making your own dumplings, and in general for always putting out good content. Nice to see some proper eastern European comfort food on your channel.

I'm Hungarian and I can say it looks pretty cool, but sour cream is usually added at the end-stage of the cooking. Sour cream is mixed with flour and then added to the paprikash and cooked for a minute to thicken the stew.

My Dad went to Hungary during college as part of a study abroad program and then again on a Fulbright afterwards for grad school and his host family made this for him every Sunday. So, he made this for me a bunch growing up and I can confirm that it is one of the most comfort food dishes you can possibly imagine. It's like chicken noodle soup on steroids

quick tip, making Nockerl (your dumplings) goes faster and easier ifyou regularly dip the "scraping spoon" in the boiling water for it to get wet and hot. I found that this somehow prevents the dough from sticking and forming those tails.

Your "Nockerl" (the mini dumplings) can be done quicker, if you put the dough onto a cutting board, hold it over the water, let the dough run towards the edge of the board and then with a knife blade or a spoon you just scrape the right amount from the board into the water.
