Ingredients & Measurements
30g of almond meal
30g of egg whites
55g of powdered sugar
20g of granulated sugar
5 Blueberry Wheat Oats (optional)
4 drops of blue food coloring
Blueberry Cheesecake Filling:
6 oz of cream cheese
1/4 cup of fresh blueberries
10 white candy melts
1/3 cup of confectioner's sugar
(add more cream cheese and/or confectioners sugar for thicker consistency)
Ingredients and Measurements:
60g of almond meal
60g of egg whites
110g of powdered sugar
40g of granulated sugar
2tbsp of espresso powder mix
(or 1tbsp espresso powder mix and 1tbsp dark cocoa powder)
Filling (not in the video):
1 cup of heavy whisked, whipped cream
1 tbsp of mango jam

You say that the egg whites need to be cold. All the tutorials, recipes I've seen before mentioned room temperature egg whites for macarons. I am gonna try with both because I am so curious how it ends up with the two different types of egg whites.

I have tried both but with my recipe and the egg white to dry ingredient content, it has to be cold because warm temperatures are too arbitrary. It also denatures the proteins making it harder to form a nice shell but please do up date is on your experiment and results! :)

Those are perfect. I'll have to try with cold egg whites to compare from the usual room temp egg whites. I bet you didn't realize how many times you say, "you guys". :-)

hi do I not need to let the macarons rest to form a skin ? or are u saying bake immediately after piping? how many degress should I bake on and how mnay minutes?

I like the idea of the recipe but could totally improve it. Check out Pierre Herme's books. The reason your colour fades/changes is because those liquids and gels are normally for icing and not baking so they aren't very heat stable. You can get really bright colours that stick with powders or some gels.

is it ok if i still dry and rest my macarons for a while..? i know u didn't do that in the video but would it still work if i dry mine?

idk why when I tried your other recipe mine became half hollow and this always happens to me :( & I don't even know what I hand mixed my egg whites either... I always use an electric mixer haha maybe watching you hand mix it made me

***** Usually half hollow means that it was not baked thoroughly or the ratio is wrong. Did you measure your ingredients with a gram scale?

In your video, you used 34g egg whites. Did you adjust the dry ingredients to the egg whites?

Cream of tartar is not necessary for beating your egg whites into French Meringue. Some people use it to stabilize the egg whites and help prevent them from collapsing.

it seems like your method is very different from what I've seen on many macaron tutorials. like 1) egg whites must be at room temp, 2) sift the almond meal and confectioners sugar. 3) they say not to use liquid for color as it might mess with the chemistry of the batter, 4) to add the almond mixture in parts. but your cookies came out fine, although I must say your batch barely had feet.

Rozy Roan I actually tried his recipe and everything came out perfect. I followed many other recipes before that state egg whites must be a room temperature, dry ingredient must be added in parts and I failed every single time. However I tried Frank's recipe for the first time and my macarons came out amazing with feet and all.

My batter always ends up quite runny, that when I tap it onto the counter, macarons just "hold hands". They said to age the whites, but yours is straight from the fridge?

Hahaha I too eat my macarons 4 breakfast!!!!!!!! Too Funny!!!!! Question hun, since your adding a bit more dry ingredients with the cereal, do you add a bit more "meringue/whites" or no????? I myself came up with a Great recipe that uses cups & an easier way to do the Macaronage too!!!!!!! Thinking about making a video but idk how to do editing or anything as I've never made or posted any videos b4...... idk LOL But CONGRATULATIONS ON THE SUBS!!!!!!! GOOD LUCK ♡♥♡♥♡♥♡♥♡♥

Cherokee Miller Good thinking, you're right Usually I add another 2 grams to the egg whites just in case but very often, I dont add enough extra dry ingredients for it to make a huge difference! Good luck on your videos! We could perhaps do a collaboration in the future! :D

Certain recipes don't use enough egg white to require you to dry them. The recipe I use requires you to dry it. 1 cup almond flour 2 cups confectionery sugar 3 egg whites 1/4 cup granulated sugar

Also I really recommend that if you use any recipe for macarons you should let them dry.
