I have made these at least ten times, without the streusel. If you like blueberry and lemon, try this; I zest one small lemon and add the zest and two teaspoons lemon juice to the flour and butter mix, and omit the vanilla. I also use half white flour and half whole wheat. After cutting the scones into wedges, I sprinkle with raw sugar before baking. They are delicious.

I cant wait to try this recipe. I have always follow the recipes of the joy of baking since 1987. The joy of baking is the reason I started baking in my teens....

I like that you actually describe what the scone tastes like when you're eating it, instead of just going "mhhhhh, oooohhhhh IT'S SO GOOD", unlike some other KZbinrs I will not mention here.

Very, very important not to overwork the dough on these; my first 2 batches came out tough and hard. The 3rd time I just barely patted it together and they came out perfect.

I've made these half a dozen times - sans streusel - for colleagues. They're excellent and my coworkers love them. I reserve a bit of liquid and coat with that before baking. Comes out nicely browned. Thanks!

Hello dear, I made this recipe but instead of cranberry I added raisins, and the scones were very delicious. My kids love eating everything that came of one your recipes. I do trust any recipe you make and I am sure that it will be the best of all. Thank you very much for your amazing work.

I made these yesterday morning, followed exactly, they were the best blueberry scones ever. I like the amount of sugar and vanilla, it was just enough for breakfast.

Wow, these were delightful. I made a half recipe, as usual, and they took about 14 mins in the oven. Just wonderful!

I have made these scones a few times and vary the fruit, sometimes using dried fruit such as cherries or cranberries. They are always great. One point, I am in the UK and a large egg here is bigger so I use less milk, usually around 90 - 100mls which works out fine. Thank you Stephanie for your wonderful recipes and demonstrations.

I made these this morning. By mistake I shredded the whole stick of butter, 8 tablespoons into the food processor with the flour mixture. I followed the recipe for the dough with the same amounts of everything else, except for a 3rd tsp of baking powder. I was worried about adding the blueberries to the dryer mixture and then adding the wet mix and kneading. I was very gentle and they turned out perfect, 400° f for 17 minutes exactly. Instead of the streusel topping I brushed them with lemon juice/powdered sugar glaze. They were so delicious I had to get them out of the house before I ate them all, taking them to my daughter and grandchildren. By far the best scones I've ever had.

I always use buttermilk in my scones. It adds great taste and texture and makes them so tender and moist! :)

Hi Stephanie thank you for this recipe. I baked some today for the fifth time and I got to say they are so yummy and always come out perfect. My family loves them. I personally turn my own butter and buttermilk so they come out extra extra rich and delicious. On a side note if anyone makes this, I highly recommend using fresh blueberries. I made the mistake of using frozen and my dough turned in to a big blue mess they still taste good but they look a big blue disaster. Good luck to all my baker fellas. 😊🍞🍕🍰🍪🍩🍴

hi stephanie :) i made these today...and you are right about how much wet ingredients needs to be put...when i did mine, i added a little bit too much of the liquid and wasnt able to knead or roll it...so i just rounded them in my palm and pressed and formed circles...i tastes so good! thanks so much for making such great recipes :) ill try it again and will be a bit stingy on the liquid :) wish me luck!

Triple thumbs up!!! I added an extra glaze on top of the cinnamon and loved it!! But a tip would be to add some more cinnamon although that's my opinion. It was very very good and I would defiantly do it again!! Thanks, Kyle

Thank you for the Blueberry Streusel Scones recipe. Because my wife & I are lactose intolerant, I substituted the ½ cup of cream with coconut cream. Also, I had no blueberries, so I used Mandarin oranges. The result was a sticky mess. I was unable to form the dough into a shape, so I plopped it onto the baking pan and coated the mess with streusel. After baking, I cut it into squares, and called it “Orange Streusel Bread”. Good tasting. I have photos, but don't know how to send them.

I've never substituted coconut cream but I would say that's why it didn't work out the same because it's a different chemistry than regular cream.

You could make the Coffeehouse Scones (which contain buttermilk) and then add the same amount of blueberries and the streusel.

you can also cut the dough in quarters. Form the quarters into a distinct heart shape. 3/4 cut down each heart from point to dip in the edge. bake. Serve so the heart is to be divided with a loved one

Make them with glaze! With streusel it ruins the texture of the scones

It would depend on what you are making. Sometimes, instead of cornstarch (corn flour), you can use plain flour or potato starch or tapioca.

Could you use the extra egg mix on the top of the scones instead of milk or cream before you add the streusel/top layer? Thank you. Great video. I like to eat my scones with clotted cream and jam

I agree with you re the liquid. It was too much. I added all and had to add so much flour and, of course, I am sure that changed the taste. I will have to try the recipe again. I also used Demerara sugar for the topping. I don't think that was the best. I have looked at the video again and will follow the instructions again with the light brown sugar..

Thank you, I will try these. I am just wondering if it is feasible to change a recipe (baking powder for baking soda, or the reverse). Especially, if I wanted to bake an item requiring cream or milk and I had buttermilk on hand. Am I looking for trouble -just go to the store- or is it possible to substitute one for the other, using 1/4 t. baking soda per cup of flour as my guide (for any baked item). Would I want to keep any of the baking powder? Why do some recipes have both, any ways? Thanks!

I tried this recipe and the dough was extremely clammy. I don't know of the berries were too soft 🤷‍♀️and I didn't even add all the liquid required. I couldn't get to shape it out. Any tips?

Either recipe would be good. If you would like a streusel than I would use this recipe, just replacing the blueberries with raspberries.

leave the round of batter in a disk. Mark the cuts by cutting down 3/4 of the way to the sheet. Put on the cream and streusel. Bake. Break apart.

Hi Stephanie, I would like to make raspberry scones. You do not have a recipe for pure raspberry scones. Which one would you recommend me to follow: blueberry streusel scones, but use raspberries? Or use raspberry and chocolate recipes and omit the chocolate? Which recipe will fit more for raspberries?

If I want to use buttermilk instead of cream or regular milk, should I add 1/2 t. baking soda (1/4 t. for each cup of flour)? Do I leave in the baking powder, and if so, do I adjust the amount of baking powder?

So my 1st attempt, the mixture was very dry, so I could not shape it. I poured several tablespoons of heavy cream (the easiest thing to do) to get all the flour mixed. What else could I have done?

Can you prepare the dough the night before and back them in the morning?

I wouldn't, only because the baking powder would probably run its course in the fridge, when you need that to happen during baking. The dry mix could easily be prepped the night before...but at that point I'd just do the baking at night and toast them in the morning if I want to serve them warm.
