Dear Stephanie, I'm curious what the difference is between a scone and a biscuit. In the place I live, scones are deep fried in oil, served with honey butter, whereas a biscuit is baked. Also, I appreciate the fact that you give measurements in both standard and metric units. It's quite helpful when dealing with a recipe from a different region.

One thing I did with my scones is freeze them and then take a slightly damp paper towel and heat them up in the microwave. They taste as fresh as the day they are made.

I like your tip Stephanie about reserving some of the milk in case the batter is too wet. I wonder if otherwise you would have a scone that's too soft or wouldn't rise as well?

The texture will suffer if you add too much milk because you will need to add more flour to be able to roll it out since it will be too sticky to roll.

Hi Stephanie - I love your video’s and have watched them for many years - can I add lemon juice to heavy cream in these or any scones then add baking powder and baking soda or do you only add lemon juice to milk to make buttermilk …….. love your recipes as they are so user friendly 👍👍👍

If you want to sour the cream, you could add lemon juice, which is like buttermilk. If you do that then you need some baking soda in the batter.

yes that is why I would add the lemon juice - and I would add baking soda - loved the savory scones with the milk and lemon juice - so I just wondered if you could do the same with heavy cream - also do you know ow what soft cottage cheese is and how you get it or what a substitute could be - would sour cream work …. the recipe is for pound cake loaf from Olesya and house from Belarus - she calls it Lemon Pie but it appears to be a pound cake and the translator changed the name - are you familiar with her channel ??
