While I agree that Chis in the background is amazing, I think he does need his own show. He's got a willingness to iterate on a dish that I find amazing and my favorite BA content is the iterative shows, like claire makes or the perfect Pizza. I think anything where Chris was given some type of target to hit and went about it in his methodological way would be great and I hope there's footage of the donut process.

Hi Claire! An idea to potentially improve your recipe. In addition to the monosodium glutamate that is providing umami, the original Doritos also contains both disodium inosinate and guanylate, which are chemicals that boost the umami sensation on the tongue. This is the main idea behind the basic Japanese dashi where Kombu (containing monosodium glutamate) and Bonito flakes (containing inosinate) combine synergistically to make a wonderful yet simple stock. Guanylate can be found in abundance in dried shiitake mushrooms. So what I would suggest you try adding to your recipe in small amounts are 1) powdered bonito flakes and 2) dried shiitake mushroom powder. Hope this helps! :)

Have to say I actually made this recipe just now and the flavor profile is so much more accurate (and simultaneously kind of elevated) than I anticipated it would or could be. Absolutely nails the umami ‘just one more chip’ flavor. It definitely requires some uncommon ingredients, but would encourage anyone to actually give this a try!

These gourmet makeovers with Claire are so fun and entertaining , but, I bet, in real life , it’s VERY stressful for her. Claire you have the perfect iterative process of testing and improving. Major food products have extraordinarily high amplitude flavor profiles (like Howard Moscowitz describes via Malcolm Gladwell's Ted Talk on Choice, Happiness, and Spaghetti Sauce). It's so tough to get a blended amplitude flavor profile where you don't taste outlier elements separately. Example: generic cola tastes like a bunch of different flavors: cinnamon, caramel, corn syrup vs. a Coke which tastes like a Coke. The difference is how carefully blended and balanced the flavors are.
