I just love how Claire is basically a scientist in Gourmet makes, throwing hypothesis, making experiments to confirm or denying them and then iterating by throwing a new hypothesis based on the results and trying again. I really loves her creativity and resourcefulness

Her knowledge of food is really underrated. They really just cut scene over her amazing ability to tweak recipes based on scientific processes. Any given episode she makes like 100 on the fly food science decisions based on just her own knowledge

Brad may not be around, Andy is who knows where, Carla floats through from time to time, Gaby is often very helpful, but Chris is the reliable, well informed opinion that is Always in the background I love all of the BA chefs, but Chris (in the background) is the BA MVP, he does not need his own show all the time, he is the backbone of all the others I Love Chris in the background!

While I agree that Chis in the background is amazing, I think he does need his own show. He's got a willingness to iterate on a dish that I find amazing and my favorite BA content is the iterative shows, like claire makes or the perfect Pizza. I think anything where Chris was given some type of target to hit and went about it in his methodological way would be great and I hope there's footage of the donut process.

Hi Claire! An idea to potentially improve your recipe. In addition to the monosodium glutamate that is providing umami, the original Doritos also contains both disodium inosinate and guanylate, which are chemicals that boost the umami sensation on the tongue. This is the main idea behind the basic Japanese dashi where Kombu (containing monosodium glutamate) and Bonito flakes (containing inosinate) combine synergistically to make a wonderful yet simple stock. Guanylate can be found in abundance in dried shiitake mushrooms. So what I would suggest you try adding to your recipe in small amounts are 1) powdered bonito flakes and 2) dried shiitake mushroom powder. Hope this helps! :)

Evidence that Chris is an NPC: -He's always, always wearing the same outfit. -He always has a pen behind his right ear, uncapped. -Every time I've ever seen him eat food on this show he sniffs it, makes the face where he squints his eyes and nods slightly, and then takes a very small bite before giving his opinion. -He's always in the background and sometimes he's important to the plot.

The "Claire Makes Gourmet" series is one of my absolute favorites on KZbin! I love the way everyone pitches in to help, even if they are busy with other things. And Chris is always so helpful in getting the components of the flavor/texture etc... just right!

Considering how often everyone consults Chris, you might want to consider just keeping him mic-ed up during every shot. EDIT: I wonder if that 'baked-on/pasted-on' look/flavor of the original is because they put the flavoring on while there's still a little hot oil on the chip.

Have to say I actually made this recipe just now and the flavor profile is so much more accurate (and simultaneously kind of elevated) than I anticipated it would or could be. Absolutely nails the umami ‘just one more chip’ flavor. It definitely requires some uncommon ingredients, but would encourage anyone to actually give this a try!

These gourmet makeovers with Claire are so fun and entertaining , but, I bet, in real life , it’s VERY stressful for her. She constantly has to ask her peers and managers to taste try, then the big guns come in and taste it and give their opinions . She has to be going in ten different directions at once .

Claire you have the perfect iterative process of testing and improving. Major food products have extraordinarily high amplitude flavor profiles (like Howard Moscowitz describes via Malcolm Gladwell's Ted Talk on Choice, Happiness, and Spaghetti Sauce). It's so tough to get a blended amplitude flavor profile where you don't taste outlier elements separately. Example: generic cola tastes like a bunch of different flavors: cinnamon, caramel, corn syrup vs. a Coke which tastes like a Coke. The difference is how carefully blended and balanced the flavors are.
