I make this often! I also add any leftover veggies I have on hand-like zucchini, mushrooms, broccoli, spinach, etc. I also use season salt, smoked paprika, garlic, and pepper for amazing flavor! Add eggs over easy and an avocado and it’s love on a plate! 😍

I'm sure those taste fine. However, there are a few ways to make it even better. Cut the potatoes into slightly smaller chunks and wash off the starch in water first. Then chunk up some bacon and cook everything in real butter. Microwaving the potatoes is not necessary. I use med-high heat, cover, and stir occasionally to avoid burning. I've learned when to stir them so they brown but not burn. The difference in taste is amazing.

I always use to cook my potatoes until almost done, then add onions and peppers or anything else to the pan..then everything gets cooked together for a nice crispy texture.. 😋

Beautiful recipe, thank you. I use lard, but mostly butter and cream together, and also olive and avocado oils. "Vegetable" oils i don't use at all nor margarina since 2002 and I started having children in three months! before that I hade none. Those oils are plastic. And forgive me but I will add eggs at the end of the recipeeee... and frie them.

Yikes. Not a fan of using the microwave... It changes the orthomolecular structure of the food and nukes any benefits and nutrients out of the food you are microwaving. Sigh. I was wondering how you got them soft. That makes more sense.

Any heat applied to food breaks down the nutrients, including your oven or boiling etc. It’s really the cook time that matters most, there is still plenty of nutrients left over in food that is microwaved. It doesn’t “nuke all nutrients”, that is ridiculous.
