Well Karen when you read the cookbook it tells you keep the bread in a warm draft free place covered and let rest and the couch is a great place to take a rest what intrigues me the most is how she got one pack of yeast to raise up 5 pounds of flour! It’s got to be the afghans, and towels. The Dough doesn’t lose it’s rice temperature no more humidity grandmas are smart Resourceful and not to be messed with especially not Gina

My biggest “take-away” from your videos is the tried and true old school techniques. People today think they need expensive appliances for everything but, in my opinion, doing things by hand teaches you how to get a feel for the food and you get consistent results every time. Yes, bless the dough so it rises. Wrapping the bread was called Keeping the baby warm. Always give one loaf away or the next batch would be bad. That’s what my BisNonna always said.

Every Sunday I have a nice Italian lunch after church for my parents [Sicilian dad], my 2 sons, and my daughter, Italian son in law and grandbaby Sophia Angelina. I have been using Ginas recipes and I absolutely love her easy style and delicious food as well as her beautiful personality. My son has a KZbin channel[ Demetrios Levi] but I tell everyone that Gina is my favorite KZbinr equal to my son. I showed my folks Ginas videos when they were over yesterday and they loved her too! That bread dough looks like silk...so beautiful, Gina! My Nonna Isabella made 6 loves every morning for her large family. She'd put some loaves in to bake then go next door to church for the 5am mass w/her lady friends. After mass everyone was welcome to come back to her house for coffee and hot bread...but NO talking. They said the Rosary then everyone went home to start their work for the day. So proud to come from such good people. Like you!

Great video! I can't imagine making 40 to 50 pounds of flour into bread. Yes, you certainly did work very hard - but it has kept you young. So very good to watch your make this bread and see the texture and how you did everything. I wanted a knife and tub of butter to go with a fat end piece of fresh bread - I could almost smell it. My ancestors come from Denmark all the way down to Egypt and all in between. Growing up, my Penn-Dutch (4 gen American) grandmother taught me to bake stuffed chickens, turkeys, apple pies. My Italian ancestors hailed from Pianella, my Italian grandfather married a Lithuanian and had my Dad. So, I love everything! I enjoy Gina very much, she makes me want to cry! No matter where my family came from, they ALL farmed and worked very hard. They came here for the same reason....to live free! God Bless America! God Bless Gina!

Gma Gina's videos are great! I started wanting to make bread during the first pandemic shutdown and could only find recipes using fancy pants mixers or bread machines. This is a great old school recipe and it works Everytime! Another issue I had was my dough never rising properly. Now I wrap it up in a bunch of blankets & throw it on the couch. This totally works wonders!! I have learned so much from Grandma Gina's videos these past few months. I even make my own sauce/canned tomatoes now! Thank you Gma Gina, you are a blessing!!

Even though I save her videos I decided to buy her cookbook which I found on Amazon. This is an instructive video, but especially when she gets to portioning and shaping after the first rise. (BTW - love, love, love the scissor action.) She pulls the dough into a skin, but just barely, and certainly not like a professional baker would. This is rustic baking without apologies and none are needed. She bakes on experience and instinct. The loaves formed are shaped likewise and the on rack baking technique is really inspired. She's using a very versatile dough which is illustrated when she gets to where she stretches is onto a pan and then proceeds to cut it into a fougasse shape. This is a baker of confidence and versatility. And of course she sings to us too. The best part. Cheers Gina!

Hi Ms. Gina 😊 I have missed you! We sold our little farms from in town and bought and bought a large home that has 2 propane stove ovens. I am getting ready to make your bread, which is literally our favorite bread in the world!! I even wrap my bowl with towels on the couch! Thank you so much for all your help and recipes. I will definitely try to "do ita like-a this"! Hugs to you and all your family who help make it possible to learn from the Master!
