You can omit milk powder, the bread will still be very nice, don't worry :)

Theoretically it'll be slightly wetter but as the milk powder only takes a small part in this dough, it won't affect that much. If you feel that it's too wet, you can add 5 - 10 g flour extra but try not to add too much, particularly from the beginning because it may make the dough to be too dry in the end. Slightly wet dough is normally better than slightly dry dough. Good luck with trying this bread and thank you so much for all of your compliment and support :)

+fem: I don't know why but I can't reply directly to your comment so I hope you'll see this. Without milk powder, the dough can be stickier/ wetter. However, this also depends on the type of flour you use. So if after about 10 mins kneading, you feel that your dough is still too wet then you can add a bit more flour. Regarding pandan flavor milk bread, if you have pandan extract, just add a bit into the dough. If you'd like to use pandan water from fresh pandan leaves, substitute a part of water/ milk in the recipe with this pandan water. Note that the green color in fresh pandan water will be changed/ fade away when being cooked on high heat.

I just made this recipe today without milk powder! I spent 5 hours making this- including waiting time for proofing. Lol It was a successful bread, taste good just like those I can buy from outside, but the surface is not soft, with bit of wrinkles - maybe I should lower my oven’s temperature/ lesser egg wash. However overall, it doesn’t look like Hokkaido milk bread, more like a normal bread. But it’s good for a first timer like me 😌 thank you!

I made this today and I’ve already eaten half the loaf!! So sweet and fluffy, it’s as soft as wonderbread but it’s REAL. Kneading it was the worst because it started as a much stickier and messier dough than in the video, but it was great within 25 minutes or so. I’d love to make these as dinner rolls next!

Lần đầu làm bánh mì Hokkaido, không có kem tươi nên e thay bằng 50g sữa tươi và 25g sữa chua có đường, tăng 5g đường. Bánh ngọt dịu, thơm thơm, đặc biệt là mềm ẩm, xé thớ y như trong video. Thích lắm ạ. Lần sau làm lại e sẽ dùng kem tươi để biết vị ngon nguyên bản của nó :))

+thịnh dương trung: chị nhớ khi đi học ở Le Cordon Bleu (trường dạy nấu ăn, làm bánh) tại Paris có hỏi thầy giáo (là đầu bếp hàng đầu của Pháp) về việc đeo nữ trang khi nhồi bột. Thầy bảo nếu có vòng hay đồng hồ thì tháo ra, chủ yếu là để không làm vướng víu, còn nhẫn cưới hay đính hôn có 1 cái thì đeo không sao. Thầy cũng vẫn đeo khi nhào bột :)

+Hương Nguyễn Nhiệt lò cao không phải là lí do cho bánh khô em ah. Trừ trường hợp lò có nhiệt không chuẩn thì bánh mì ngọt cần phải nướng ở nhiệt khoảng này, nếu không vỏ bánh sẽ cứng. Thêm nữa thì chỉ nhìn hình cũng không thể nói chắc chắn là bánh khô hay không được (và nhất là trong trường hợp này thì nó là một ruột bánh rất đủ ẩm :) ).

Although, I didn't use this exact recipe, I have made Hokkaido milk bread by hand before. It's no joke. I had blisters on my palms from having to knead it for so long. It was worth the effort though. Easily the absolute best bread that I've ever made/had. If I ever make it again, I'll do so when I have an electric stand mixer.

This bread recipe turned out great in my bread maker. Looked just like what I see in your video when I pulled off pieces of baked bread. However I quickly realized it was a sweet bread and I hate sweet bread as much as I do sourdough bread. When I got to the sugar, first thing I thought is this recipe has got a hell of a lot of sugar in it. 40grams is a 1/3 of a cup. So I greatly reduced the sugar to 2 Tablespoons or about 25 grams. And I'm glad I caught that before the ingredients got put in the bread machine. I decided to brush the bread with egg wash 5 minutes before the bread machine started baking the dough. This is a great bread recipe and I will continue to make it I love it so much. Thank you for your video

+Nguyen Michelle : Bánh khi để nguội thì vẫn còn mềm và xốp, nguyên lieu mình dùng là sữa bột ensure (vì ở nhà không có sữa bột loại thường), và heavy whipping cream (công thức thì dung whipping cream). Mình ở tiểu bang lạnh và chỉ để bánh trong hộp có nắp đậy, nhưng bánh vẫn ngon. Mình làm có 1/2 lượng công thức thôi nên qua ngày sau là đã ăn hết rồi, hihihi

O its the flour that makes a difference to ... i used whole wheat flour but bread flour is a lot more softer like store loaf bread. I like the egg wash trick you could also put herbs and seasoning on it with the egg wash. Perfect looking rolls

I made this recipe and it is delicious! Sadly I didn't have bread flour (used all purpose) and neither the cream (replace for 43g of butter and milk to reach 75g). I will do it again using the right ingredients and I will warm up the milk because my bread took forever to raise! Thank you for the detailed explanation! 😘

It was gone in few second. You might have put the dimension of your pan wrong. It comes out as 9.8" x 1.96" x 2.75".

Ok, update: so there was issues with the bake… after a few hours I checked that the inside was still raw like completely raw. The outside and the top was nicely golden brown with a soft bounce. I decided to bake it again at a lower temp as to not burn the outside and top part. It took 50 minutes total to have the inside totally cooked but the top part was no longer soft. It was very hard and not bouncy. Here’s what’s confusing…. Me and my dad each ate one piece right after it was baked the first time (15 min) and the inside was completely fine? The inside was very soft but definitely not raw. So I don’t know why after check in a few hours later I see that the inside is completely raw…

OKay.....so this came out AMAZING! Thankyou so much!! Everyone in my family thought it was challah bread, which is a delicious bread they make in Jewish bakeries here where I live. The first time I made this, I did not perform the entire kneading proccess and proofing process, and the dough did not come out fluffy. I had also used a lot of substitutes. But the second time, I put in all the steps and the result was delicious confection.....thanks again! :) You are truly my favorite food youtuber, and you put in so much effort in every video...You are amazing!!

thanks for the recipe. i've been looking and trying for so many recipe and most of them makes my bread too dense and smell very yeasty. Even though i have to wait for almost 3hour for 1st proofing and 1 and half hour 2nd proofing. But its exactly like i wanted. In Bulgaria we call the milk bread Kozunak. It's a traditional bread for Easter time and its very delicious! :)
