I made this cake following the recipe exactly and all I can say is WOW! AMAZING! It turned out perfect! I was afraid the lemon syrup would be too much for my taste but to my surprise it was the perfect compliment to the cake. The glaze frosting was also perfect. I love this cake. Wow! I wish my mum was this good at baking. Whenever I bake she always try's interfering because she cant stand when I do something without her guidance. In the end she adds all sorts of random ingredients to my cake which ruins it. If you have a daughter she's very lucky!

Heya! :) So butter is required in this recipe for the creaming stage as it holds air that's whipped into it. You may be able to substitute some of the butter with oil but not too much as this recipe relies on that air that's been whipped into the butter to provide a fluffy texture :)

You'd have to experiment but you might be able to get the right amount of air with a combination of margarin/vegan butter and non-dairy whipped cream substitute.

I have made this cake following the exact recipe and I must say it’s super yum… Perfect lemon cake ever… but I don’t know if my oven is powerful or not… It only took 20-25 minutes to bake this… Thank goodness I kept track otherwise it would have burnt 😅 and all the ingredients were in room temperature but still the batter was curdled at last… can you tell me why was that??

Very good recipe N very good teacher.The cornflour addition guarantees a soft velvety texture. Haha, my concern though is the amount of sugar.Perhaps I would reduce the initial amount from 200g to 120g ( my normal sugar for cakes). I would already have extra sweetness from soaking syrup n lemon glaze. Altogether...yumyum❤❤❤❤❤❤
