From a gameplay perspective, it's not too surprising. Franklin is the first character you have control of in the open world at the start of the game. Meaning he gets hit with all the tutorials for dealing with wanted starts early on by default. In addition, he is the character the game defaults especially in driving sections which normally give you wanted stars and task you to avoid the police. For example, the game defaults to Franklin in the driving sections of the Jewelry Store Heist and Big Score. Presumbly to give the player the best advantage in evading the wanted stars the player just received. Since Franklin is involved in almost every heist as a driver and needs to drive when the situation gets rough, he gets more wanted stars. He's also the least involved with Merriweather, Triad and FIB stuff. Most of Micheal and Trevor's missions require them to deal with those other factions which don't count for wanted stars. Franklin is either not involved or only present in a supporting role/backup (e.g Fresh Meat).

Fun fact: If you get a haircut before the motorcycle mission at the beginning, Lamar will say “Thank god you got rid of that ye ye ass haircut” (something like that)

There's actually quite a few examples of little dialogue changes. On the Merriweather heist if you actually get the flying lessons than when asked about it by trevor he will say " I came prepared, I feel confident in the air" something like that. Different from if you don't do them where he gives a noncommittal, "Y'know I was gonna do them but I got side tracked"

If I'm understanding what you're saying on Franklin & Lamar, you did try to use mission skip in order to skip getting stars? Cool video, reminds me of when I played GTA V and tried to not commit crimes. To get around, I would often call a taxi. When driving, I would follow traffic laws, and when walking I would wait for the crosswalk light. When I knew I had to commit crime for a story mission, I tried to not bring my personal vehicle or do anything that could be traced back. Including making sure I was wearing a mask, even when the game doesn't actually care. That added many hours of gameplay that wasn't actually needed, but I enjoyed trying to have a more realistic criminal experience. Remember: Don't break the law, while breaking the law.

Correct I did try to skip to the next checkpoint there (though technically this isn’t a glitch/still requires you to play through the rest of the mission). I tried to see if that would help with any of the wanted stars, but basically anytime stars appeared in a mission they were there at the beginning of a checkpoint so this didn’t really solve anything in my playthrough.
