@@lightoftruth8672 I'm not entirely sure why, but there's a vibe. They don't tend to have a 'theme' or motif to base their brand around, it's usually incredibly simple and you see people who wouldn't otherwise be working in a commercial kitchen, like grandmas, or family members. It's informal, the people are usually sort of talking amidst the customers and regulars. Lots of regulars. That said, never been, it's the way it is in India lmao. Just more yelling mixed in here.

That little 'slot' that you wanted to crawl in is a removable lid for the ventilation system. They're often put at spots in the ventilation system where blockages occur. So pop of the lid, get the crap out that's causing the blockage and pop it back in.
