I learnt to make something like this in school over 40 years ago in Bristol. Still make it now, although with variations (bacon, potato, parmesan flavoured pastry) Works well as a pasty too. Good to see this, Geoff

Hi Di. I am glad you like this recipe. Just as an aside I have never like cooked cheese, and have never eaten a pizza because of that. But as I get older I have discovered that taste buds must change since I now enjoy cooked cheese immensely. I also now eat olives and celery which I never did until the past 4 or 5 years.

I never ate olives, dates, capers or honey, but I do think that following recipes from you and another favourite culinary expert of mine, has broadened my horizons. This pie is a winner and will be perfect for the next pi day. It is a day to celebrate the mathematical constant pi (π) and to eat lots of pie. Pi Day celebrates the mathematical constant π (3.14). Hi Adele. I hope you enjoy the pie when you make it. I change the camera angle, depending on what equipment I am going to use. I also change the tripod, lower or higher. Sometimes it is difficult to get it just right. I want to do an overhead camera, but so far I haven't found what I need for that. As for trousers, I think I sometimes forget to put them on LOL.

That is a winner Geoff. I agree it would be ideal for a picnic. The video did look a bit dark today, was there an under-cupboard light off, or maybe the white kitchen cupboard doors were affecting the exposure? Also there are a couple of versions of the 'where you could eat it' dialogue at 22:33. Apologies for being picky :-) I think it's a great recipe and long may they continue. I might try this with some smoked bacon sneaked in somewhere.

HI Miles. I spotted the error towards the end, and have edited it 'in situ' on KZbin, which is something I haven't tried before. It will take a few hours to process and update but then I shouldn't repeat myself LOL. The video, for the ingredients part seemed slightly out of focus, which is not something I could fix, after the event. That may account for darkness during that part.

It is great to take as a picnic, or even a slice wrapped up to take for lunch at work. I have considered doing something with some of the recipes, but I haven't decided what I want to do yet.

OOOH, this looks tasty. Could you let the onions (not the leaks or scallions) cook until they are golden/caremelised? It would make them a bit sweeter, but I love caremelised onions.

Hi Karen. If you mean the chopped onions you could cook them longer if you wish. But the process of slow cooking, until the water evaporates makes them nice and sweet. The sliced onions too, cooked in the same way give a lovely sweet and and juicy flavour.

I am confused a bit, why didn't u cook all onions together ,and b4 u put in chesse separate a little onion for the base,? Which I think u put on its own so it tries, to prevent a soggy bottom, maybe I've missed something, can u help

Hi Karen. I cooked sliced onion separately to spread over the base as i wanted that slightly different feel in the mouth, of the shreds. But, of course, you can do it any way you wish.

Hi Karen. Yes you can bake it in a glass dish. Baking in glass is slightly different though, since it takes longer to heat up and then it retains heat for longer when it is out of the oven. You may have to adjust the baking time a little. But if you are used to baking in a glass dish I think you will know that.
