CHEESEBURGER SOUP
2 lbs. ground beef
1 onion, diced
3 carrots, shredded
1 tsp. dried basil (we like to add more!)
5 cups broth (chicken or homemade bone broth)
4 large potatoes, cubed
8 Tbsp. butter
1/2 cup all-purpose flour
3 cups milk
4 cups of cubed cheddar cheese
salt and pepper to taste
In a large pot, cook beef, onion, and carrots until meat is thoroughly cooked and vegetables are softened. Stir in basil, broth, and cubed potatoes. Bring to a boil and cook until potatoes are tender. In a medium saucepan, melt butter then add flour to make a paste. Add the milk to the butter/flour paste and whisk together until the paste has dissolved into the milk. Add the milk mixture to the potato soup. Bring to a gentle boil and reduce heat to a simmer. Stir constantly and cook just until thickened. Turn off heat. Add cubed cheese and allow to melt.
