Cheesy Rolled Taquitos // Flautas de Queso con Rajas

Who can resist an easy meal packed with flavor that is crunchy and cheesy? I can't resist, that's for sure because i look for texture, flavor and heartiness and these Flautas have all that. The good thing about these flautas, is that you can pick your favorite melting cheese, i love using queso fresco, Panela, Muenster just to name a few. If you don't like heat, you can remove the seeds and veins from these jalapenos for a milder flavor or you can use Poblano pepper strips if you'd rather do that. Side these Flautas with Mexican rice, beans or just top them with shredded lettuce, avocado, shredded cheese, pickled onions and Crema. This meal is quick, delicious and easy, and that's good enough for me. I hope you give this recipe a try. ❤️

INGREDIENTS FOR SALSA______________________
3 Large Roma tomatoes
1/3 small Onion
2 Large Garlic Cloves
3 jalapeños
1 Serrano pepper
1 mini sweet pepper (optional)
1/2-3/4 C. water
1 Tbsp Chicken Bouillon tomato flavored
Salt as needed
EXTRAS___________________
16 oz. Queso Fresco as needed or Panela or other melting cheese
Corn Tortillas as needed
5-6 Jalapeños for roasting then strips
Oil for frying
Mexican Crema or Sour Cream
Avocado
Shredded Lettuce
Pickled Red Onions

Rachel, I haven’t felt real good for a few days, but got tired of fast food.
