UWL is wonderful, down 27 pounds, Blood Glucose down from 154 to 117 and blood pressure now normal. Energy is through the roof and I am in my late 70's.

Ok, thank you for including your age. I’m almost 69 and am losing about 1pound a week, but I struggle to be 100% compliant. My husband and I eat out a lot and I just have a hard time choosing salads. I guess I should “girl up”. And make choices. How are you doing it and how long did it take for you to loose the 26#’s?

I never use nutritional yeast. Not many people know this, but curry powder gives a cheesy flavor and that’s what I use.

Oh my goodness this is to die for. Only thing is i had an extra large cauliflower and a tray full of roasted veggies so I had to double the recipe. Can I freeze it, cause I m 73 and I live alone ,no one to share it with. It will last me for two weeks, for sure.

So creative! Thank you for sharing! I currently make a cheese sauce out of potato and carrot base with seasonings including unfortified nooch but I much prefer the idea of one that is non starchy veggie based. And I've had my suspicions about nooch being okay to include, it just tastes too good.

I ran out for an orange bell pepper, and made this sauce. I like it, but I would start with a bit less chipotle powder next time. I watched this again and I misheard you say 1 t chipotle powder instead of what you actually said 1/8 t chipotle powder. ha,ha, wow!

This looks amazing and i cant wait to make it! I'm currently loving my whole head of cauliflower, steamed and roasted like you've made, and I get so full from it it's an entire meal, my large salad is my breakfast if i dont make a smoothie, so I need to find a way to use this sauce as a snack since after following your recipes i stay full and just dont have a lot of hunger in me. I could just eat this with a spoon....

Dillon Holmes has had a really nice cauliflower cheese sauce recipe as well. I guess everyone has to tweek to their own tastes. I had to throw mine out I made with curry. Just didn't taste good to me. Maybe because I used powdered curry?

What do you think about coconut aminos? Is it fermented? Nutritional yeast not good for candida either or fermented foods.

@@CHEFAJ I see that. But a big difference in Coconut aminos has 90 mg of sodium per teaspoon (5 ml), while traditional soy sauce contains about 280 mg of sodium in the same serving size. I can't have any fermented foods or yeast.

Those who want to avoid nutritional yeast, I suggest using Dr. Fuhrman Vegizest instead of Benson’s Table Tasty although contains a very small amount of nutritional yeast. Otherwise wonderful sauce recipe.

@@deborahboyar8202 AJ put the cauli in the microwave steamer thingy with a cup of water. Cooked for 6 min. Got it out, took lid off and poured the whole thing into the blender. So the water in that neat microwave steamer thingy was only what was left AFTER the cauli was cooked. It wasnt a lot, cos most of the one cup of water used, would have been sucked up by the cauli during steaming.

@@CHEFAJ One of the radiologist I work with has a daughter with peanut allergies and while researching it, talked with another doctor (I believe it was an allergy specialist) who believes it has to do with corporate farming. For example, there used to be many many small farmers who grew peanuts of varied genetics in different areas, now there are just one or two supplying all the peanuts. It makes for less genetic diversity in the peanuts, a stripping of nutrients in the land, and if something is wrong with the peanuts, they all have it because of them all growing in the same place. And like you said, throw gmo's and pesticides in the mix and it makes for sick people. Wish we could go back to the small farm way of life and put the corporate farmers out of business!

Yes, i did that today! I don’t have an air fryer so I put my veggies in my toaster oven @ 400. I gave the carrots a head start by steaming them in the microwave first. Worked great! Thanks Chef AJ for another wonderful recipe!
