First thank you for explaining the difference of the two.. when I first saw the opening picture I thought it was a Crème brûlée recipe as well. So I am so happy you explained the difference. I always love learning about the differences in dishes. I also love trying dishes from all over the world. So this recipe is amazing. The iron you used is amazing. What a fantastic traditional Spanish dessert just love this crema catalana. I can imagine all of the orange and lemon citrus zest really adds a ton of flavor to that custard. I love the old fashion way of searing the top with that iron that you put in the fire pretty awesome
