There's a clip of him during his Great British Feast tv special where he finds out that the eel he wanted to cook had been frozen. He's suitably pissed and tells the crew not to film him. They continue filming and Marco becomes properly scary, telling the cameraman that "I control myself very well".

Marco has always been an extremely moody chef. He no longer works in a high volume, high stress professional kitchen so we don’t get to see that insane side to his personality. Make no mistake, he has a dark side, a scary side, and when flips, he demands respect and no excuses along with no Bull Shit! In the end though the man is a great chef!

If you watch his older videos from the 80s, you'll see that he's always done the flower or salt toss from a height. Best reason is because it allows you to cover more area evenly.

I made this a while back. First Marco Pierre White recipe I tried. Adapted it slightly. Used a 500ml stock cube instead of the stock pot; 1/2 his amount of chicken and leeks and added some mushrooms for variety. Very tasty for such basic ingredients.

I would make the béchamel sauce from scratch with butter, flour, milk and Knorr chicken stock pot plus extra salt and pepper if the chicken stock pot doesn’t season sufficiently.

He's taking a jab at those chefs who shake the pan for no reason other than to show off. There are a lot of legitimate cases where shaking the pan is good (like with pasta), but if you're just frying onions or leeks, it's pointless.

If it’s a ‘normal’ bechamel there is no stock at all- the liquid is milk. If there’s stock in it it’s more like a velouté, with no milk, but (strictly) traditionally finished with egg yolks and cream.

Shortcrust - 2 parts flour to 1 parts butter combined until of breadcrumb consistency. Finish with cold water just to bring it together (you won't need much). Whack it in the fridge in cling film until chilled.

You take a lot of leftover Meat and bones 3% fat 1% meat. and add in a lot of additeves msg, yeasts, acidity regulator, aromat, palmoil, selleri powder, lemon powder, onion powder, potatostarch, 4 types of sugars, and 50% salt and boil and dry the shit out of it. It’s simple its delicious, and a sense of vacation, it’s stockpot.

Rory Tucker bechamel is just a roux with milk and cheese. 1) melt some butter in a pan 2) slowly add an equal quantity of flour, whisking it in as you go 3) once your roux is done, very gradually add milk, stirring through (because the milk is colder than the roux, if you do it too fast your roux will get lumps. Add some, stir, add some more) 4) once you get the desired quantity of sauce, bring to a light simmer and start stirring in some grated cheese until you reach your desired consistency

My car recently suffered from an intermittent loss of power over several days. Rather than take it to an expensive mechanic I decided to put two beef StockPots into the fuel tank. It made it worse, so I added five chicken StockPots and now my car doesn’t work at all. I can’t complain though. It was my choice.
