"Tastes like chicken" - I mean, they say that about everything, right? I was lucky enough to find a very fine specimen of Laetiporus sulphureus - Chicken Of The Woods - a fungus that really does resemble chicken when cooked.

IMPORTANT: if you harvest it, make sure the trunk it grows on isn't that of a yew tree. i hear it can grow on those and it will incorporate the trees (deadly) toxins. it can similarly leech out tannins from oaks, which some say render it unpalatable. i only ever had it on willow (most common host around my place) which might require consideration if you are on any medication that must not be combined with blood-thinners. in other news: the other week i harvested an amazingly fresh specimen which tasted almost like meat with lemon and had the texture of raw salmon; then only a couple days ago there was another bloom on the same tree, this time in warmer, drier weather, and i probably waited a little longer before harvesting (only a small amount though) so it had developed a much more pronounced umami and mushroom flavour with the exact same texture as chicken tenders. yet again specimens i had had before had been less intense in flavour, but had the texture of chicken breast. this mushroom seems to change in texture and flavour profile depending on weather, host, and other growing conditions, sometimes just good ish too amazing. it's worth frying up just a tiny piece first to find out what you are dealing with, especially if it's your first time, or if you find it in a wholly different stage than you have has before.

it's not a bad idea to cook ALL mushrooms in a tablespoon or so of water and boiling it down before adding some oil or butter. Fungus is very difficult to overcook, but it acts like a sponge and will soak up LOADS of oil until its been cooked a little, so par-boiling them prevents this.

The moment the mushroom first appeared on camera was stunning. Such a vivid color against the darkened landscape and right in the center of the shot. Even though I know nothing about foraging (other than what I learned from your videos), I drew in a breath as if I had just seen treasure. What a cool, cool moment. If I had the privilege of cooking with it, I’d probably cut it into strips like you did, season it with salt, pepper and a tiny bit of cumin and then sauté it with onions, garlic and green peppers on olive oil. Serve it on a corn tortilla and you have fajitas! 😋 Oh my gosh, now I’m starving.

I’ll never forget as a child, we had people at our house begging to take the mushrooms off one of our trees, I thought it was so weird and when I learned about this mushroom, I realized why (15 years later) they wanted those mushrooms so badly. Jarda P. A stump isn’t necessarily a dead tree. Trees are “social” plants that will provide nutrients to other trees who’ve networked with their roots. It’s the same reason albino trees can survive in spite of their white chlorophyl absent leaves.

I have never heard it called prized before, it's a very common fungus in many areas. It's actually quite easy to grow. You can buy the spawn and even grow kits.

Here in New England USA we find it growing on birch deadfalls and is mostly white in color. When I hiked the Appalachian Trail in late summer, I'd look for birch stands off the trail and take a detour to search it out. I carried a hed or 2 of garlic in a piece of nylon stocking tied to the back of my pack and plenty of clarified butter. I ate lentils, split peas couscous pasta or tabouli and when I come across chicken of the forest dinner was a feast that night. I was first shown it by a Viet Nam vet who was driven to the trail by the wounds of the war, where he lived for years full time going North in Summers, South in Winters like a wandering hermit befriending all he passed That was 1988, when he told me his trail name was Storyteller I said... that's what you think. His real name was Clayton Gardener. Peece to you my brother

I'd recommend cooking/softening them with water and salt instead of oil. once they're tender, you can add oil or butter to brown them. that way you don't bite into a oil saturated sponge.

I sometimes put butter on certain species of mushroom. I have like a million recipes and I dont think I've ever ate mushrooms prepared exactly the same twice...

Tip : Try to get them when they are young, the older they are the tougher the texture. I picked mushrooms on Vancouver Island for a season and we use to cook Chicken of the woods with Cantrell Mushrooms (Pepper Flavor) in a frying pan with garlic butter!

in WW2 rationing meats like chicken were not as rationed. the reason things were rationed is supply ships getting sunk, and since chicken was made in Britain we had no need to ration it that harshly.

Only one of these I saw was in a zoo near some giraffes. It was a perfect specimen. Unfortunately in an area which was fenced off. I could not get to it and harvest it. I was gutted. 😕
