We went for a lovely walk today through pastures and fields, and picked a whole big basketful of field mushrooms (Agaricus campestris).
There are many ways to enjoy this fine edible fungus, but one of my favourites is just to simply cook them in their own juices, and serve on top of slices of toast.

I'm _fairly_ sure that if Mike was comfortable shouldering that considerably onerous burden (liability?) we'd have had more'n one video on the subject by now.

@@EggBastion yes. I think that if people are interested in identifying mushrooms themselves, he'd be more likely to encourage them to get a comprehensive local book on the subject.

Yeah, I don't want people to think I am an expert at this. I know enough to keep from poisoning myself, but some of that is sort of embedded in my head in a way as I fear I might fail to fully communicate

Honestly, just the fact that you’re considerate enough to only let your dog run on fields with no lifestock and the fact that you spend your time just doing great things (like obviously your scambaiting videos) is amazing You’re really a great person and you deserve this popularity since your videos are just fun and interesting!

Porcus got chased by a dog tonight but the guy called his dog back and it went back. The next dog chased her and attacked her. Could only see a graze on her foot I think the dog was pulling on her harness. It broke my heart because on the way back it was almost like her spirit was broken . Up until now she was care free when I took her for a walk. On the way back there was fear in her eyes .

I prepare mushrooms exactly as you do, but I don't cut quite so much of the stalk off. IMHO the stalks are the tastiest part. Many years ago, a local shop sold the stalks separately. I think most people used them for soup though. A friend used to discard the stalk entirely, and PEEL the cap. Sacrilege!

With some species, both the cap and stipe is favoured. Other species only the cap is consumed (as the stipes are too fibrous usually), and with some the mushrooms are grown in such a way to have more stipe than cap, as they're favoured over the cap itself. Fascinating stuff.

try some sage in the mushrooms. Sage and mushrooms go together perfectly! Like tomatoes and basil or duck and mugwort. Give it a try!

I smelt fresh sage leaves for the first time a couple of days ago, the dried stuff just doesn't compare. So fresh and vibrant, i need to get some plants of my own :D

@@tiggerbiggo Absolutely worth getting. It's wonderful stuff and deserves way more attention, then it commonly gets, imo. I was introduced to fresh sage leaves fried in brown butter (over pasta) by an Italien boyfriend many years ago and have since delighted many other people with this simple, yet delicious culinary surprise. It goes well with meat and fish and (I'm sure) also mushrooms.

@@tiggerbiggo Sage grows easily too. I find the purple sage good & made into tea good for a sore throat. However there are also most attractive variegated varieties including a pretty purple, green & white type.

That "meatyness" you describe in your mushrooms near the end is 'umami', the tongue's response to glutamates. Mushrooms are one of many foods that are rich in umami flavor.. others being yeast extract (marmite), cheese, and preserved fish to name a few.

@@dogwalker666 Hi. Yes, the recent ones in CA, that are still going on in the Central Coast area, were started by lightning, though I heard one was arson. :( The storm woke me around 3am. It was THE WORST lightning I've ever heard or seen. It went on and on and on, and rattled the whole house. There was no rain at all (near me). I live on the coast, but the redwoods are nearby, and that's where the lightning hit. This fire is called CZU August Lightning Complex, because there were multiple strikes and fires that grew together. It was 26% contained yesterday. The good news is that the big redwoods often survive fire. I'm letting your video play as I type, and you just got to the good eating part. Nice! Next time you go foraging, spare a thought for us here, and give those shrooms a smooch!

My mouth is watering. The best mushroom (and maybe even the best thing) I ever tasted was field mushrooms found on a walk in Dorset, carried in a hat for some of the journey and then in our empty sandwich box for the rest. Mmmmm

When I was 10 years old my father, my sister and I usually went into a forest nearby to collect Mushrooms. Mushrooms on toast was something we had too. And I live in Germany, so it isn't just british.

I had never thought to try mushrooms on toast until I saw this video, and decided to give it a go today with some button mushrooms left over from making another dish. Absolutely splendid - a great light lunch when served with some greens on the side. Thank you for sharing your cooking adventures with the world. You inspire more people than you'll ever know.

Our season has passed in NZ, Spring tomorrow but our neighbours paddocks had some beautiful field mushrooms. A mate in Scotland is keenly anticipating the local woods growth of Chantarelle

I first caught your channel because of the scam stuff, and then remained because I was fascinated by your cooking. With my background british cooking is absolutely foreign, so it's just fun to see the things that you consider common which are so exotic to me. Mushrooms on toast us my all time favourite thing to eat. I like my toast buttered too. As a child, (one of 9) my Dad would grow mushrooms in big buckets in the cellars. He also used to pickle onions and I've still never found any commercially pickled onions that could beat his. I could also mention an Uncle who grew onions on his allotment...but what he did to them might be too gross for some people to read 😁

My friend and I used to go "mushroom hunting" when we were kids, we'd make spore prints and identify them with a guide. It was fun!

Identification is VERY important! Not too many years ago a Congolese family living in my native Denmark and picked and added into their stew what they thought was a familiar mushroom from back home. They were all very sick and a few of the children didn't make it 😔

Talking about identification, I often go harvesting mushrooms here in Italy with my father, but we now only a few species that grows here (like Cantharellus cibarius, Cantharellus tubaeformis and some species of Boletus and Armillaria genere: the most delicious hahaha). If I were there with you I would never take these mushrooms, and I think you too with mine. We always need to remember that also if we know our mushrooms, we may don't know other countries' mushrooms!

Same here but, yet, I have to admit having developped a thing for wood ear in chinese hot and sour soups and now I make room for them in all kinds of sauté like pad thaï and other strongly aromatic settings. Still, I cook them (Edit: regular yucky fungi) for my significant other with all the love of a fungi aficionado while hating every aspect of them (the things we do for love). Wood ear doesn't share any aspect of all other mushrooms. I recommend trying if you ever feel like it; it's a texture thing more than a taste thing really. i once went mushrooming with a group in ireland. when we got back we pulled out the stems and put a small lump of butter and a little salt and put them on a turf stove. when the butter was bubbleing we ate them. i dont think i ever tasted anything so good.

In the UK there really isn't many convincing lookalike field mushrooms, for anyone who's scared to pick mushrooms I'd recommend this species. Yellow stainers often have a stained stalk anyway without the need to score the cap, as long as it's pink or brown you're golden

Back in the seventies my mum had a friend in Canada and she made a creamy mushroom sauce with pea soupy stuff. Put on toast and grilled.God! It was good! My mum's friend also bought me a mattel toy who said "Here comes my body" . Thank you for revisiting those days for me...a little girl from 1972.

in austria, you wouldnt eat mushrooms with toast. you would cut the toast/bread/rolls into half inch cubes and let them dry, soaking them with milk and eggs, forming them into tennisball sized dumplings and steam them until they are done. then you call it "Semmelknödel". ^_^ if you want it fancy you can roast the toastpieces and add some spices like parsley.

So here is the thing, I have been watching this guys Mushroom videos for a while now more than his normal videos and well, I don't even like Mushrooms hah but these videos are really enjoyable to watch and who knows, I may start eating them again.
