Yes, you can fry it separately, but I'd probably boil them to serve with the noodles.

I explain this in my blog post! (healthynibblesandbits.com/chinese-chicken-noodle-soup/) It's because she's cooking a whole chicken. If you cook chopped up chicken parts (like thighs, breast, etc), there will be impurities. Just bring water to boil, cook the meat for 5 mins and then throw away that water. Scrub off the pot and just cook as usual.
