I used to hear stories of children eating glue during my childhood, and then I remember back in those days we made glue from just starch such as this and water too, so they are perfectly edible. And so easy to make too. Definitely gonna try making this cold noodles dish soon!

For those that can't get douchi, Japanese Hatcho Miso is quite similar. At least, in my opinion, it has a kind of cheesy and umami flavour that is similar to the one that makes douchi so unique. The reason is that Hatcho Miso is almost or entirely made out of soybeans.

It's Japanese, called "Suribachi". I think it's sold in all Asian markets. They have mortars, too which are smooth on the inside. People use this for grinding. There is a surprising variety of such things, made from all kinds of materials.

I’ve never made, or even tried, a jelly noodle before. I bet my daughter would have fun making this and eating it though.

East Meets Kitchen I’ll have to try making them sometime. When I make Asian food from scratch it’s typically dumplings or alkaline ramen noodles, both of which have a hundred ways to make them. I guess I need to diversify even more :)

My daughters (not vegan but Korean food lovers) made me something like this with waterchestnut flour. It was delicious. I am guessing that this would likely be more nutritious as mungbeans have more protein?

Mung bean starch has almost no protein, it's mainly carbs
