I used to make this cake many years ago, and bought it into work for my co- workers.(I'm retired now). But, instead of chocolate chips on top. I put a thin layer of coconut buttetcream on it. Then drizzled it with melted chocolate. They would just devour it on the spot!! It was the best cake and so good! I also,used 1/2cup apple sauce in place of the butter,to cut down on the fat. ( worked out great & was still really moist!)

I agree with you as well. I also, like that you use your spatula to scrape every bit of the inggredients out of the bowl.( I get annoyed at other videos when they don't do this! I think it's really wasteful doing that,) And I like how you get right to starting the recipes, too.

This is similar to my mothers mashed potatoe cake that she would bake when I was growing up in the 50's. She poured it into a bundt pan for baking. Delicious. I'll bet this is too!

Tom, that’s looks great! I’ve never made a chocolate one, but I’m going to try it. BTW, be sure and lock your Kitchenaid mixer before you turn it on. It can cause your batter to shake out of the bowl. Plus, if you notice, it makes it vibrate. Don’t want that. Thanks for Aunt Mac’s recipe! 💔🙏🏼💔

Great cake!!! I can't eat a lot of those ingredients so here's a healthier option I'll try: Use cacao nibs instead of chocolate chips & cocoa. Add honey & mashed dates in place of the sugars. Use coconut oil in place of canola oil. Replace buttermilk with coconut or almond milk.

That's two recipes that I have been wanting to make...breaded tomatoes and chocolate zucchini cake! My mom made breaded tomatoes frequently, inexpensive and plentiful! I never liked it as a child, but my husband likes it and I want to try it using your recipe! My sister-in-law bought a chocolate zucchini cake at a church bake sale years ago and it was wonderful! I have been looking for a recipe for that. I even adapted a chocolate mayonnaise cake recipe and it was pretty good, but I am anxious to try your recipe. Thank you for sharing your family recipes!

We buy a product called double chocolate muffins by Veggies made Great (in the freezer section of grocer). They are made from Zucchini and Carrots yet you get no taste of the veggies - the muffins taste only like delicious chocolate. They are only 100 calories each. I really love your recipe and the sweet family memories it brings up for you. God Bless!
