Geez! I was just looking at some of the comments on this video and I can't believe some of the things people say! This dish looks amazing. Not something you would eat everyday, she's cooking for a restaurant people! It's a treat! There are always ways to change up how it's prepared if you are concerned about fat content, ingredients etc. I will be making it this way. Thanks again for helping me figure out what to make for my husbands birthday dinner! He will love this! Mushrooms, pasta, prociutto? Delish!

Pretty damn good on the technical part. She seems like a good chef, knows her shit. For the people complaining about the amount of butter or overall fat; well first of all that's a big pot of pasta that would probably serve a family dinner so you need alot of fat to emulsify. But if you wanted a dish that's less fatty, leave out the cream and compliment the sauce with a bit of white wine and mushroom stock. Also some garlic wouldn't hurt

SO GOOD!!!!! Seriously! Delicious! 1. I miss Claire! I miss her so much! 2. I just made this tonight and there are zero leftovers.... it was super good! I will definitely make this again. The only modifications were that I used an 8oz pack of dried pappardelle from Trader Joe’s instead of 12oz, and I used less salt. I was super worried it was too saucy when I added the broth... but then like magic it thickened up into a beautiful creamy sauce! My husband didn’t even want to add ketchup! So that’s an accomplishment! Thank you BA and Claire! Keep these fast simple doable recipes coming!

I was looking for somebody with technique and knowledge to show me a great way to cook a creamy pasta with bacon and exotic mushrooms that I currently have in my fridge, and after clicking through a number of videos, I found this one. Spot on, exactly what I wanted. The technique with adding the stock to reduce is great - I will add that step in. Thanks to this chef for a great demonstration.

Sorry guys I'm just now seeing these comments. I've made this twice since then. First of all it taste delicious. And was very easy to make. Nice dish to whip up quickly on a weekday. I used a duck prosciutto the second time I made it and plain ole bacon ( but a uncured fancy one) the third time. I highly recommend using a homemade stock over a store brought one. Also make sure to use as wide a variety of mushrooms as you can find. The pappardelle pasta can be found at FRESH THYME, AMAZON FRESH, and sometimes Trader Joes. My boyfriend requested this for his birthday in December and that's thats the last time I made it. It is an occasional dish for it is RICH Honeeeey... we love to have with a wilted spinach/ arugula spring salad with toasted almonds and shredded summer squash. A nice crusty bread with fig and garlic butter jam( just a smear) and a beautiful Rose' and your good to go!!! For me everything takes about 45 minutes. I time everything like a well choreographed dance and I enjoy making the meal.

Just made this one & it was awesome! Tho, I added a little parm, 1/4 tsp little lemon juice, and finished with 1 tbs unsalted butter. The thyme with the earthy mushrooms is perfect. Doesn’t need prosciutto but it does make even better. Thanks BA!

Good Evening ! I tried last night your recipe. My wife and I loved it. It was very good. I warmed up leftovers tonight and it tasted even better. Crisping the prosciutto and crumbling is a great idea. I will do that for other recipes using prosciutto. I used crimini and white button mushrooms. Judging by the comments it seems people haven't yet gotten past the "fat makes you fat" myth that was debunked years ago. Sugar is what you need to watch out for, do some research people

watch a documentary on netflix called what the health. It'll help you to avoid saying things like this again which have no basis in medical literature. Fat is far more calorically dense than carbohydrates and contributes to cardiovascular disease, T2D and cancer. Please do not share nutritional information if you don't have a clue

Dom Crawley being in a caloric surplus makes you fat, which is usually achieved by overeating on either fat or carbs (or both. Not to say overeating on protein cant do the same, but it's just harder to do).

Fat is more calorically dense, but that doesn't mean you can't eat a lot of fat and still maintain a decent weight. As long as your overall intake is reasonable it's not an issue. However, since dietary fat is obviously not converted directly into body fat, it needs to be broken down and reformed which takes energy and reduces the load, whereas sugar is basically pure energy for your body and doesn't require any significant breaking down. All the research about fat being bad for you was funded by sugar corporations back in the day, if you feel like looking into that.

Good take on a simple dish, especially considering the other side of Atlantic. Here in 🇮🇹, we make that quite simple. Pasta choices are either tagliatelle or pappardelle, either one works great as an egg based pasta. However, a BIG difference is that nobody fries prosciutto crudo, not even does it goes inside an oven for a second. Guess this was an alternative version replacing the classic bacon. If you do have to add meat, the best option is speck & it’s in cube format, not slices(just like the Guanciale in carbonara). Some very rare options include a fat chunk of crudo inside the mushroom, but frankly not necessary. Another good marriage is adding thinly sliced garlic & not the onion as the garlic gels well with the mushroom. If you don’t like the slices of garlic, just place a whole clove in the hot oil & take it out after a while, just to have the smell. Same goes for the 🌶, sliced or whole, depends on how you handle these while eating. Finish the mushrooms after adding the garlic with a slight toss of white wine, NO need to add stock of any kind(if must & really opt for it, then a veg stock with low salt content, but best left out). Sprinkle pecorino romano before serving or if you don’t like the salty taste, next option is, parmigiano reggiano. Buon appetito, 🍷.
