✅ Mirror Glaze recipe
12 g gelatine powder
60 g water for gelatine
150 g sugar
150 g glucose
75 g water
100 g sweetened condensed milk
150 g chocolate (white, dark or milk)
food coloring
Soak gelatine in water. Sugar, glucose syrup & water bring to a boil until it gets 103 C/217 F. Add condensed milk, then the soaked gelatine. Pour over the chocolate and add food coloring if you want. Blend the mixture avoiding to create air bubbles. Let it cool in a fridge for about 8-12 hours. Then reheat the glaze and blend it again. Use at 35 C/ 95 F
