Ingredients
1.5 Cups of sweetened shredded coconut
1.5 Cups of plain flour
1/2 Teaspoon of baking soda
1/2 Teaspoon of salt
1/2 Cup of softened butter
1 Cup of sugar
3 Eggs
1 Cup of sour cream
500 Grams of pineapple chunks

I made this tonight, and it is so moist with a natural sweetness, not too sweet like traditional cakes. The browned coconut on top adds a nice crunch. Thank you so much for sharing your recipe.

Nice! But may I suggest leaving half a cup of the shredded coconut untoasted? That way, you wouldn't have "double baked" coconut. ☺
