Level up leftover mac & cheese
Serves 6 | Prep 10 mins | Cooking 25 mins
Ingredients:
375g Cucina Matese Conchigile Rigate
50g Coles Salted Butter
1/4 cup (35g) Coles Plain Flour
2 cups (500ml) Coles Milk
1 1/2 cups (180g) Coles Edam Cheese, coarsely grated
2 cups (300g) finely chopped leftover Coles Christmas Double Smoked Ham
1/4 cup finely chopped chives
1/2 cup (35g) Coles Orignal Breadcrumbs
2 tbs Coles Extra Virgin Olive Oil
Extra chopped chives, to serve
Method:
1. Preheat oven to 200°C. Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well. Return to pan.
2. Heat a large saucepan over medium heat. Add butter to the pan. Cook for 1 min or until butter melts. Add flour, cook, stirring, for 1 min or until mixture bubbles and is grainy. Gradually add the milk, stirring constantly. Cook, stirring, for 5 mins or until the sauce boils and thickens. Remove from heat. Stir in 1 cup (120g) of the grated edam. Pour sauce over the pasta and add ham and chives. Stir to combine. Season.
3. Transfer the pasta mixture to a 8-cup (2L) ovenproof dish. Combine the breadcrumbs, oil and remaining edam in a bowl and sprinkle over the pasta mixture. Bake for 15 mins or until golden brown.
4. Sprinkle with extra chives, to serve.
