Jalapeno Hushpuppies
2-3 TBSP CHOPPED ONION
2 TBSP. DICED JALAPENOS (JAR) OR 1 TBSP DICED FRESH JALAPENO
1 EGG
1/4 TSP. PEPPER
1 CUP CORNMEAL MIX
1/2 TO 3/4 CUP BUTTERMILK (TO MOISTEN)
Hushpuppy Mix: In a glass bowl combine onion, jalapenos, egg, pepper, & cornmeal mix. With a large spoon begin mixing ingredients while adding milk slowly until blended and wet. Let it stand on the counter 10-15 minutes before frying. Preheat Skillet: In a skillet place frying oil (canola, corn, or vegetable oil) about 1/2 inch deep. Place small piece of mix in oil and when it floats, and sizzles oil is ready to fry. Drop dough in skillet and brown on both sides.
Deep Frying Hushpuppies: Drop hushpuppies into 350-degree oil and fry 8 minutes. If oil is getting them too brown turn heat down so they will have time to cook in the middle. Make them smaller not larger! You do not want raw dough in middle of the final puppy! Drain on paper towels for 3-4 minutes. Take off paper and place on sheet pan in warm oven until dinner is served. Enjoy with fish or other meal!
Mustard Fried Fish
3-4 FISH FILLETS (1/2" THICK) SEASONING OF YOUR CHOICE
YELLOW MUSTARD (optional)
1 CUP WHITE LILY SELF-RISING CORNMEAL MIX
SALT & PEPPER
1/2” CORN OIL
Pat fillets dry and sprinkle with seasoning, salt, and pepper. Coat well with mustard. Put cornmeal mix in shallow dish (like a pie plate) and coat each fillet taking time to press cornmeal into fish. Let battered fish rest 5 minutes before frying for a good crust. Fry in 1/2” deep hot oil for 2 minutes per side or until golden brown.

I use the food processor to make coleslaw. If I add tomatoes, I chop them like you do and put them around the outside of the bowl so people can get how many they want or none at all. It's very pretty that way with the red and green. I also don't use mayo in my coleslaw. Just equal parts vinegar and water and some Splenda, salt and pepper. Kind of German. My mom makes it that way too. Also very healthy. Very good with fish and a baked potato.

Love that you use cornmeal to batter the fish. That's the only way and I will have to try the hushpuppies.

There’s was a bar and, restaurant in Ohio that used to have the best beer batter cod! Cod is my favorite fish! Kroger’s has some of the best seafood, there premium brand ( Private Selection, in the green label bag) it doesn’t have that foul Shrimp 🍤 smell or taste, it taste like crab! I try to keep it in my freezer all the time! This guy was stocking it in this morning, I told him, he had me worried for a minute when, I first seen, that didn’t have it. We got to talkin and, he said, they seem to sell a lot of it! I also about don’t use a lot of All Purpose Flour no more, I been using the self raising flour and, the results are so much better and, the taste is so, much better to! 😊

Hey Yammy, I owned a seafood Restaurant for 38 years. The reason for making hushpuppies for the next day is because we served thousands of folks ,especially on the weekends. It was kind if difficult to make them on the fly. We would have to hire someone just to stand there and only make hushpuppies. I live in Northwest Alabama.. Love watching you cook and bake. Just like my gramdmothercand parents taught me. Southern Girls sticking to our roots. I had breast cancer too. Horrific thing to go through and like you I have lymphodema as well. I feel you girl!!! ❤❤

I love flounder. It's so good especially when it is good and fresh. I put carrots and green bell peppers in my cole slaw. I have never tried tomatoes but I an sure I would like it.

Oh my gosh, I made sausage gravy and biscuits tonight too! I would love cantaloupe but it’s truly been years since I have bought one because when they are hard as bricks, don’t have any fragrance at all, and when I take a chance on them I’m just disappointed.

I like slaw a lot, kids don’t so I’ve never made it, but I do cook cabbage, use a recipe I got from LA Times when I lived in California, one just needs a few things, chopped cabbage, chopped ham, chopped potato that’s been nuked a couple of minutes, some bacon grease and chopped onions if you want to add them, then just cook until cabbage is soft. I don’t measure it, I just put in enough for at least two meals. I also will eat boiled cabbage. Tammy I had a pet chicken that flew to my shoulder every time I went outside…. 😊

Check your video quality setting by taping/clicking on the playback screen and then choosing the gear icon. I tend to listen more than I watch so I usually change my quality to 144 to save data but if I need to see the details of a video I change it to at least 480 or sometimes 720

Hi Tammy, my favourite coleslaw is shredded cabbage with chopped bell pepper and chopped tomato. Instead of vinegar I use a little pickle juice, salt and pepper and mayo. It is delicious!!

Tammy, I love hush puppies and these look delicious! I want you to know I have used more of your recipes than anyone else I watch on KZbin and Instagram. There are other cooks online but your recipes are the BEST! My family loves your Skillet Pot Pie, Mac and Cheese, Onion rings, Lemon Meringue Pie, Chicken Fingers, Southern Biscuit Mix biscuits. This looks delish. Never had maters in slaw before. I'll try that soon. Oh also careful giving seasoned food to doggies as anything with onion or garlic is toxic to them. Had a friend loose her furbaby after giving it some food that had those seasonings.

Momma always made baked potatoes in the microwave, 4 minutes I remember. She would grate a whole onion in her hush puppy batter too, was yummy.

My all time favorite fish batter is by far corn flake crumbs since that's all my grandpa used to cook all our sunfish and crappies and blue gills small mouth and large mouth bass and Northerns. Yum Yum with his secret ingredient which is celery salt sprinkled on after there deep fried. So delicious and I love hush puppies. Lastly FYI when Chris was showing us the seasoning that you put on the fish well I couldn't read it for whatever reason this stream is very grainy.
