I realy like that you use sour cream. Most corn casserole dishes are prepared with cream cheese which can be hard on a stomach . A couple of us can not eat cream cheese because of the discomfort it causes and for us sour cream doesn't cause any of those issues. We love corn casserole and I can't wait to try your version of it! Mine is similar. It's made with creamed corn, regular corn, bacon and chopped onion and chopped green pepper. I stir it together with some pepper and salt and then add 2-4 eggs, beaten. I stir until well mixed then put in a 350 oven for 30 to 40 minutes til eggs are set. I got it from an old 1970s Betty Crocker Cookbook in the 70s. The name is Squaw Corn. That might insult the politically correct but I am definitely NOT Politically correct! I might add chopped sweet (not spicy) red pepper and sour cream next time. I never measure much, I just guestimate. Enjoy!!!🤠🇺🇸♥️🎅

I was born and raised in Omaha, Nebraska. In the 50s and 60s my Mom did all the cooking, but when I was in my teens, I did some, mostly Holidays. I love baking, especially eating the dough. In 2005 my husband and I moved to Fremont, Nebraska where I live now. My husband died last year, so I basically cook for myself and have lots of leftovers.✝️w🇮🇱🇺🇸🤠
