That video is severely missing kiviak/kiviaq. Its from like greenland or iceland i think. They stuff a few hundred birds inside a seal carcass, sew the seal shut and bury it for a few months so the birds ferment and decompose inside the seal into like almost a jelly that they then slurp through the birds neckhole. And surprisingly enough birds decomposing inside a seal carcass for a few months isnt too hygienic so it eating it can cause illness or even death

I've eaten beef tounge at an asian Restaurant, it is fantastic. I also believe that if you're gonna eat an animal you should use all usable parts of it, so I don't think any part of the animal is rlly more disgusting than another, including bones being part of gelatine. I think that's a very constructed way of thinking.

Outside of the mexican influence it's also popular in Japan, specifically in sendai, and there's a couple more spots in the world but outside of those it really isn't widespread at all I think Edit: I just looked it up, it seems to be eaten in more places than I thought, france, belgium, poland and even my country germany all have different ways to prepare it. Since I never heard of those tho I'm either uneducated or it's only that popular in mexican cuisine
