I sous vide regularly it is pretty easy. My Instantpot has a sous vide function. You just bag the meat, throw it in at a temp you set and walk away. After that it’s just grilling to get colour.

It's not completely impossible nowadays. Some Japanese wagyu farmers have been looking at different opportunities to sell it outside of Japan since the pandemic happened. Although that being said, this is A5 wagyu, which can be difficult to find without paying an arm and a leg for especially with the amount it looks like he has. I guess you could also settle with "American Wagyu." I wouldn't recommend it to everyone, but if you truly enjoy beef I feel like it doesn't get much better.

Just to clarify things, The red stuff on the steak isn't blood, Its a protein called myoglobin its responsible for making steaks have its red color and the juices are mostly just fat and water

On wagyu I prefer medium because it's still very flavourful but not so rich because more of the fat renders out. Definitely try it out.

Medium is usually recommended for cuts that are higher in fat. Wagyu definitely fits the bill for it.

If you add salt before you sous vide , it'll absorb moisture , that's what salt does , that's why you season after you sous vide.

If steak has been contaminated with bacteria such as salmonella and E. coli, it can cause food-borne illnesses. Blue rare is effectively uncoocked steak but with a sear and *no bacteria or dangers*. Raw can be deadly, rare is cooked. "Isnt it a little raw" would imply it's not safe to eat, "Isnt it a little *rare*" would be the correct word as it isn't raw, its rare

I am using a translator. I am Japanese and live in Japan. You have the impression that wagyu beef is ridiculously expensive, but my local butcher sells it for around $10. Branded items (Kobe beef, Miyazaki beef,etc.) are known to be expensive. If you ever come to Japan, I recommend stopping by a butcher shop. As a Japanese, I am proud of Wagyu beef is popular around the world😊

I reverse sear Chuck eye and it looks every bit as good at a fraction of the price. The taste is unbeatable also. With this thick of a cut, you don’t need to sous vide, just slow cook and sear. That way your meat isn’t wet and sears much easier/better. My two cents. Having it tonight. Can’t wait.

The reason for waiting to adding the pepper and garlic is specifically so you can get a better sear. And you'd actually be even better off dry-brining overnight so when it comes out of the sous vide, it will have a 100% dry, flat surface to make contact with the griddle.

I bet nobody knew Dutch Belted tastes BETTER than Wagyu, proven by a test panel and a chef who prepared all types in the same way. The best explanation for this is that Dutch Belted is both slow growing and never bred for better results. This is why the cows are small compared to the modern bred cows.
