If I'm being honest, the rolls are the only thing I don't make from scratch during the holidays because I've always been so intimidated, but I'm definitely giving these a try! Thank you for the tip on keeping them soft as well! Blessings 💕

I MADE THESE ROLLS FOR THANKSGIVING 2023. THESE ROLLS ARE SO DELICIOUS, SO SOFT, AND YOU DON'T HAVE TO CHEW FOR LONG. THEY MELT IN UR MOUTH. THE ONLY THING I DID DIFFERENTLY, BEFORE I PREPARED I DIVIDED THE BATCH INTO HAVE. I HAD A SMALL GATHERING AND I DIDN'T NEED SO MANY ROLLS. WHEN I DIVIDED THE BATCH, I HAD 9 ROLLS. THE RECIPE IS SO EASY, THAT I CAN PREPARE IT ANY TIME OF THE YEAR. WHEN MY FAMILY TOOK A BITE OUT OF THE ROLLS, THEIR EYES WERE STRETCHED WIDE AND EVERYONE SAID, "OH MY GOD, WHAT VIDEO TAUGHT YOU THIS RECIPE." SO THE REST OF MY THANKSGIVING WE WERE TALKING ABOUT CLAUDIA AND VIEWING BOTH OF HER CHANNELS. SO, I DON'T KNOW IF CLAUDIA'S EARS WERE RINGING, BC SHE WAS THE TOPIC OF MY THANKSGIVING DAY. CLAUDIA, THANK YOU FOR SHARING AND TAKING YOUR TIME AT EVERY COOKING STEP.

Just to clarify for me , you made the recipe as is, and only baked half and got 9 rolls?
@JACKIELVSGOD11 ай бұрын
@@thisiscami8301 NO... I DIVIDED THE RECIPE IN 1/2 FROM THE START. FOR EXAMPLE, THIS RECIPE CALLS FOR 5 CUPS OF ALL-PURPOSE FLOUR, I USED 2 1/2 CUPS OF ALL-PURPOSE FLOUR, AND I CONTINUED LIKE THIS WITH THE OTHER INGREDIENTS. WITH MY SMALLER RECIPE, I WAS ABLE TO DIVIDE OUT EQUALLY 9 ROLLS, BECAUSE MY BAKING PAN WAS ONLY BIG ENOUGH TO HOLD 9 ROLLS. IF I HAD A BIGGER BAKING PAN, I WOULD HAVE MADE THE ROLLS SMALLER TO FIT EQUALLY IN MY BIGGER PAN. WHAT I AM TRYING TO SAY, IS ONCE YOU KNOW THE INGREDIENTS TO ANY RECIPE, YOU CAN ADD UP THE AMOUNTS (TO COOK FOR A LARGE CROWD), OR YOU CAN SUBTRACT DOWN TO MAKE ENOUGH FOR YOURSELF. I HOPE THIS HELPS.

Permit 2-3 hours for the dough to rise. After you form the rolls permit 1 additional hour for rising before baking. I made the mistake of giving myself too little time before a Thanksgiving dinner and my rolls were rather small. Just a friendly tip that I hope helps one of you out.

I’ve made these three times - the recipe is very similar to my grandmother’s - but is “easier” using the mixer and there is not a second rise time. My only question - each and every time I’ve done them the 5 cups of flour is just not enough - my dough after the 7 minute knead time falls of the hook as an almost thick batter and very sticky. The first time I added almost an extra cup of flour - the last two tries I’ve cut the milk back by a tad and didn’t add too much extra flour - will see how it is after the rise. Just don’t know how you got your dough that stiff to hang off your dough hook and not stick to your hands with only 5 cups of flour. Recipe is delicious and I’m not complaining (since this is the recipe I’m using for thanksgiving!) but wondered if anyone has l actually made these yet like me and found the dough very wet. Thank you!

I came across the same issue and for some reason it didn't double in size even tho I added the yeast to it hmmm. I'll keep practicing in the meantime. Nice to know I wasn't the only one that may have to tweek the recipe just a tad. 😊
@kristinfrancis11 ай бұрын
I made them a fourth time - and I added almost 1 more cup of flour and the dough it turned out beautifully - it does take some time to rise….maybe the yeast wasn’t fresh? I have active dry yeast (not instant) so I took 1/4 cup warm water, the yeast and 1 tsp sugar and put them in the mixer bowl and proofed it. Then added 1 1/4 milk the butter and shortening sugar egg and salt to the mixer. Then added the flour. (Kinda reverse from what she did) then kneaded like she said. Dough turned out great!

its possible this is because of how imprecise cup measurements are for flour. If you dip a measuring cup into the bag and level, the flour is more compacted this way, with 1 US cup of flour weighing about 155 grams or 5.5 ounces using this measuring method. If you spoon the flour into the measuring cup and then level, the flour is less compacted, will weight about 120g or 4.2 ounces per cup. The spoon-in method is the expected standard for volume measurement of flour, however recipies often do not specify which method to use or provide a more accurate weight measurement for the expected amount.

@@Greens5511 I made them again last night for Christmas dinner, I let them go through the first rise, then shaped them in 2.5 oz. balls and now they’re in the freezer. I will take them out tonight, (Christmas Eve) and let them thaw naturally and allow for the second rise and then bake them off in the morning. I will update after I see how this method works! Can they be made ahead of time? Or can the dough be frozen? Do they freeze well after baking? Sorry to ask so many questions. I've never made rolls before, and I'm thinking about trying it for Thanksgiving. I have been following your videos for several years and absolutely love your work.
@kevinsews11 ай бұрын
Yes, they can. Let the dough rise first. Next, divide them into rolls and place them into the freezer on a flat pan. Be sure and leave space between them. After an hour you can place them into a plastic zip bag and freeze them. To make them take them out and let them rise for 2.5 to 3 hours (depending on your environment). Cover with melted butter and cook them as you normally would.

I really want to make your recipe but since I am taking care of my mom, who is diabetic and my father, who is battling pancreatic cancer, they both can't havetoo much sugar yet, I want them to try them.
