This looks delicious and I love eggplant. Sometimes it's hard to find a larger eggplant and this time of year there is never-ending large zucchinis. Have you ever substituted zucchini for eggplant? I didn't know if the amount of moisture in zucchini would make it too runny. Your thoughts?

Foil should never go near your food in the oven to prevent leaching. To keep your food safe put a whole sheet or a wet crumpled sheet of parchment under the foil before sealing it shut

Your Eggplant Lasagna recipe is excellent especially since the eggplant slices are not sautéed and instead brushed with oil which is healthier. Also, in preparing this dish you brought to our attention that you were one slice short (it didn’t detract from the dish at all). However, that comment brought to mind that if you are short a slice or slices, the recipe can be converted to Eggplant Rollatini by rolling them up with the filling inside and securing with a toothpick and then topping them as described in your recipe. What do you think? Of course, I subscribed to your channel with so many more great recipes to explore! In closing, I extend my best wishes to you and your family for good health, much happiness and continued success with your channel as we enter into 2024!

I'm a firm believer in pre-salting the eggplant, I always do it in any eggplant dish I make because by doing this you also take out the bitter taste of the eggplant.

Just made it, really good. I added a bunch of mushrooms and cut back the cheese a bit to make it a little healthier. Garnished fresh basil on top. I used green snake eggplants since my garden is full of them, slicing each into thirds lengthwise. Great dish.

I tried another eggplant lasagna recipe and it was yummy. Plan to try this one also as it looks delicious! Now I realize for many this is a bit nit picky but I always peel my eggplant and remove the spinach stems. Sorry but that’s just me

ha.. you should just float a banner across the screen that says" preheat your oven" .. then you're off the hook.. Looks delicious. I'd like to try it zucchini slices too. Im told you salt and grill the zucchini strips first - that pulls the excess water out - and you don't end up with a soggy lasagna. That trick might work with the eggplants slices too.
