Had these many years back. I was in Opelousa Louisiana and a client invited me to dinner at his house where we had fresh crab and lobster. It was a feast with all the sides. Thanks for sharing this recipe. It brought back some great memories.

@@CookingWithRy - Ah... I am in Illinois now days. Retired and up here where some of the grandkids are living. But many, many years ago I use to teach, mentor, and consult photography. O had a lot of clients down there as well as Mississippi, Alabama, Georgia, Florida, and Tennessee. Actually had clients all over the US but most were in the Southern States.

You know how much I love seafood, so this was a must watch for me! Beautiful crab and lobster cakes! Never had them smoked. I'm thinking you have to go easy on the smoke with the delicate flavors of both crab and lobster, but I bet a bit of smoke takes them to another level, which from your expression eating them, I could tell it was definitely raised to another level. I love crab cakes and this looks AMAZING! I'm taking notes... peach wood sounds good. The other thing I noticed is that you used a bbq mat. Someone gave me one as a gift a couple years ago and I've never used it. Clearly nothing stuck to the mat. Have you used it since? I dont recall you using it. Going over to see you on the Hot Seat. Have fun :)

@@CookingWithRy Difficult to get outside of Oz but easy enough to buy online. It's a very unique flavour and if you do dig some up and enjoy the flavour profile, there are plenty of other Australian Native herbs you can play with to create unique BBQ/Smoke flavour profiles. Tasmanian Pepperberry would be one that I would suggest also trying, got a nice kick but has the most beautiful flavour. Works well with stronger meats that can take a more aggressive flavour and smoke!

The crab was lump from a can, pre cooked, and I grilled the lobster tails before chilling and mixing in :)
