I made this today. It is absolutely delicious. I put it on acorn squash. I added some turkey sausage. Wow!!!. I didn't want to use milk so I used coconut cream. I cannot believe how delicious this is. Next time I'm going to put it on spaghetti squash.

@@mrswilbert it’s obviously, not a traditional Alfredo 🤦🏻♂ it’s a healthier version as it says in the title “ cottage cheese, Alfredo” that’s what she does,trys to lighten the calories and up the protein… But if you wanna traditional Alfredo, go for it, use heavy cream and make a appointment with the cardiologist as soon as you can cause you’re gonna need it.

I plan to try this tomorrow! My husband and I love pasta with sauce, but most are high in calories and fat. I don't make them often. I'm excited to try this! We found the Banza brand chic pea pasta better than all the other “protein” pastas! Tried them all about 6 months ago. It’s even better tasting than traditional pasta, & WAY healthier. Where has this been our whole lives? 😂I’ve made Low carb, low fat, & high protein versions of Alfredo, Baked Macc & cheese, & Goulash, Spaghetti…& so much more! Thank you for this new recipe with cottage cheese (it’s clearly having a moment..) as the cheese sauce vs. heavy cream or cream cheese & butter. We will be trying it for dinner tonight! 😋🍝

This was very good. I added some fresh minced garlic, grilled chicken and mushrooms. My basil turned black-ish in the fridge and was only in there 2 days hmm, advice on why that happened? I'd make this again and add more veggies. Yum

Nice, Can we do cc pesto? Cover pot to speed up boil. Micro and spoon will blend CottageCheese (cc), too. (vegan ingred to help nutro yeast, nut protein). Or, some alternative pasta's take much longer, like brown rice pasta. Check 25% before and after box time, Cheese frequenlty likes nutmeg and ground red pepper. Love. I'm so inspired by this. CC is in the zone... Try cottage cheese n parm instead of ricotta in Lazagna. MMMM.

Good recipe👍. Though I would substitute lactose free cottage cheese and unsweetened almond milk. Maybe some sliced portobello & peas. And a hugh green salad to cancel out the 6 teaspoons of "hidden sugars" in the chickpea pasta. Subtract the fiber number from the carb number and divide what's left of the carb by 5. That last number is the teaspoons amount of "hidden sugars," even when the nutrition label says zero sugars added.

Usually when I make the alfredo sauce with cottage cheese, it's never the same each time. Recently, I was trying to thicken it a little with a bit of flour like with some sauces, but as soon as I did that all water was separated from the curds and then I was stuck eating watery pasta with curds. (I didn't want to waste any.

Barilla red lentil is the tastiest with the nicest texture. Either the spaghetti or Rotini. It's best to make fresh. Don’t meal prep the pasta. The texture gets weird.

Your recipebis missing one indigrient that turns into an actual heatable sauce that doesnt break : cornstarch. Add about 12-15g of cornstarch into the bleander, then heat the souce in the pan until it bubbles. The cornstarch will stabilize the sauce so the protein doest separate from the fat. You can store it and use for later.
