what I have done and love: mix sugar and cinnamon into whipped butter for easier spreading and use an offset spatual to spread, brown sugar substitute tastes better in the filling than white sweetner.

Butter can be kept on the counter for several days and still be good. I have a butter crock. That way I always have room temperature spreadable butter. 😉

Hey Dave, the rolling pin you used that you said put water in core to give more weight to rolling pin... If you put ice water or ice cubes inside the core...some doughs you want to roll out with chilled core, so it keeps dough ingredients from melting or getting mushy or dough getting warm and having to be refridgerated again, and again for better rolling capability. I have a suggestion. Maybe others have said this, too. How about asking AI to give you recipes using blended cottage cheese, rather than strained. I think the only change would be less added liquid, and maybe less added salt. Straining is messy and you’re losing a lot of protein in the whey you’re squeezing out and discarding.

His channel seems to be like halfway between one of those full on soft-core porn ragebait tiktoks and a legitimate cooking channel. He hasn't gone full making food in a toilet with his feet for people to get off to yet, but I'm fairly certain "accidentally" squirting cream everywhere is part of what he's going for.

LOVE this idea. Easier is better and Dave's a practical man. Hopefully he sees this. You CAN use the whey instead of buttermilk to make delicious homemade blue cheese dressing (or any milk-based dressing). Or feed it to your dog or your pigs.

I'm just starting Keto, and I haven't made a recipe yet with cottage cheese. Can I do the blending thing you're talking about for this recipe? And, when you say blending, are you talking about just throwing it into my Vitamix and pressing the button? I need a little help here to get started.

@goddessgirl5891 blending = don’t squeeze the liquid out, use an immersion blender or put the cottage cheese in a small blender to blend the it to a smooth consistency. I’m not sure how the recipe will work because in this recipe, Dave is squeezing out the whey (liquid) and not using it in this recipe. You could certainly try it, but might need to add a small amount of extra flour if the dough is too wet. I’d probably add more almond flour. I forgot if this recipe uses coconut flour…if so, be careful adding extra coconut flour because it is super absorbant and might make the dough too dry. I hope that helps!

Thank you sooo much for this amazing recipe. It was so easy and the dough held together really well. I am so grateful to have found a much better alternative to fathead dough (cheese is really expensive here in Sweden). We usually don't do frosting on our buns here in Sweden but typically use cardamon in the dough. Since it is Christmas I also put saffron in the dough and homemade crumbled marsipan in the filling in addition to the cinnamon. I see lots of possibilities with this recipy, perhaps savoury pizza buns... Once again THANK YOU SO MUCH!!! Christina 🇸🇪

I would whirl all the wet ingredients (egg, cottage cheese and vanilla) together before adding to the dry ingredients. Also I would pop that dough in the freezer for ten minutes before attempting to roll it up.

My son woke up one year after I finally managed to get all the Christmas presents wrapped and under the tree by about 2 am or so. He came over to me and said so excited “Mom, mom, Santa came. The gifts are all here. Can we open them all up now?” I told him if he could get his younger sister awake sure. It took him awhile but it was so precious watching my 6 year old son waking his 5 year old sister with the news that Santa had come and mom said we could open the gifts! So yes here we were at probably 3 am opening their presents having the best time ever. I mentioned this story to my son who’s now 27 and he told me that now that I told him that story he remembered that happy memory! So many wonderful Christmas memories were made!

I remembered 2 cinnamon roll tips for you to try in the future maybe 🙃 So it might be better to roll from the long edge of the rectangle dough - more rolls I think that way. Also try cutting them with some unwaxed unflavored dental floss. Slip the middle of the piece you tear off under the roll then cross the ends over the top of dough and slowly pull down to cut. It won’t squash the dough! 🙌🏻 Thanks @daveskitchen

You can actually just rinse the white goop off of the cottage cheese curds. Just put it in a fine mesh strainer and rinse with water. Only the cheese curds will remain. No need to squeeze through cheese clothe if all you want are the curds😊

Thanks for the video. One tip when rolling out dough on parchment paper is to peel the top paper up then put back down flip over and peel what is now the top layer. Then when you go to roll it up or whatever you know it isn’t stuck on making it difficult to work with. Cheers.

Sometimes we’d have to wait for grandma and grandpa to come before my son and daughter could open gifts and they usually took FOREVER to get to our house! I mean making a kid wait until 10 or 11 in the morning on Christmas was torture for them! And of course I’d have to make breakfast for everyone! But I didn’t have these great keto recipes! Now I must say - a cinnamon roll isn’t a real cinnamon roll without a few raisins thrown in because sometimes a bit of that sugar won’t kill me lol!

Oh Dave - you make me giggle - sometimes you make me scream at the monitor, but most of the time I smile. Suggestion - after you mix together your dry ingredients - PUT DOWN THE FORK. Grab a spoon or a spatula, the fork overmixes. This was one problem you had with the log. Also, with the log, stiff peaks means you can turn the bowl upside down and they will not move. This would never happen for you because you had some yolk in with the whites. Suggestion - use a small bowl to sort the white out. If 'clean' then add it to the other whites. If it has yolk in it, add it to the yolks, it won't hurt them. Folding - use spatula, pull down center of bow then go around the side - folding in the whites. Turn bowl slightly, cut down the center and then around the side. Keep doing JUST TIL MIXED - do not overmix you deflate the whites. Todays big giggle - a rolling pin is for rolling, not pushing to the edges. LOL But at least you are having fun.

BTW, I saw people commenting about the flour choice, you can easily change out to other flours, of course the ones you choose are the most Keto friendly. A pastry brush or off-set spatula would help you out ALOT....USE YOUR PAPER TO ROLL ...that's the key and as you roll remove that part of the paper...Yes you did it BUT as you roll tighten it up take your time....also thin the icing a bit more and adjust your calculations and time ....you did good I will make this one .......Julianna NC

That is a Corelle bowl. A type of Corning ware. The wax paper is used to lift the rolls out easily grab the ends and lift them carefully. ❤️😂

just a word to the wise. I noticed that you don't use a rubber spatula to get everything out of the bowls, etc when mixing all together. This could make a difference in the ratios of the ingredients. Dollar Tree (now Dolla and a quawter tree these days) has Betty Crocker spatulas. They're great! Also, if you get a box of "rubber" gloves (I use the blue nitrile ones), it keeps your hands clean, and you can mix/knead the dough and then slather the butter without using a knife, etc. I hope you don't take offense, because maybe you actually already do this. Love your show!

Hey Dave, if you're wondering why your camera looks somewhat blurry on you it's because your microwave wanted to be the star of the show today. Lol. There is a recipe for cinnamon rolls (I do know that you specialize in Ai recipes but...) on a former youtuber whose videos are still up that uses flours like Lupin, VWG, Almond flour and such called I Don't Sugar coat. Her recipes look like the real deal. She has been away from it for a few years now....not sure what happened to her. But her keto bread uses Diedres Kitchen recipe and swaps the flax for Lupin.
