If you will lightly toast the almond flour in a skillet first, it adds a great nutty taste. I do that for 3 to 5 minutes, then add my sweetner and butter to the skillet and mix it til combined. Makes it more like a graham cracker crust. And if you add either pecan or walnut flour to it, it is even better! Definitely making this, I even have the pumpkin!

That sounds great! My wife made the same crust yesterday and put it in the air fryer right in the pie plate for two-three minutes and it came out great! Great tip! I'm not a fan of almonds and even less of almond flour, so I make a crust using either chopped walnuts, Brazil nuts, pecans or macademia nuts, depending on the flavour of the cheesecake. Sometimes I'll lightly toast them in a dry pan if I want an even nuttier flavour. Melted butter to bind it together, etc. I love the crunch it gives to the cheesecake and they're all lower in carbs than almonds too! Macademia nut crust with a chocolate/cacao cheesecake is divine! Whip your cream and your cream cheese separately first and then combine with the pumpkin. It'll give you a better, less wet texture too!

I've had a standard no-bake cheesecake recipe for years that requires: 1 1/2 cup heavy whipping cream, 1 bar of cream cheese, 1/3 cup sugar or artificial sweetener that measures the same as sugar, and a pre-made graham cracker pie crust. What makes this recipe work with just one bar of cream cheese is beating the whipped cream in a separate bowl first on low until you get it fluffed up to Cool Whip consistency. (Of course, you can speed up the process and just go ahead and use a small tub of Cool Whip, but heavy whipping cream is healthier.) I decided to use your crust, with my standard recipe I've had for years, plus I added 1/2 small can of pumpkin, pumpkin pie spice, cinnamon, and 1/2 tsp. vanilla. I have been using only 1/4 cup of sugar for my standard cheesecake because I always add a fruit topping, which adds its own sweetness. But, for this no-bake pumpkin version, I went ahead and used the 1/3 cup sugar. All depends how sweet you personally like it, really. I used Swerve Granular. When I made your crust, I only used 2/3 of each pie crust ingredient, except for the butter. I kept that measurement the same. It all depends how thick one likes their crust. I did that because I like a little less crust. So those are my variations. With your ingredients, including the two bars of cream cheese, one can make TWO 9-inch pies IF they beat 3 cups of heavy cream into whipped cream first. (Or beat 1 1/2 cups cream for one pie.) I will be using this keto crust often. No more pre-made crust for me. Thank you.

Thanks so much for sharing your recipe too. A little less fat (from less cream cheese) is NOT a bad idea at all! Plus, I'm more of a fan of whipped cream than cream cheese anyway! But I WILL make and try both recipes, and with a pecan crust I'll partially sweeten with crunchy glazed pecans, for texture. And then I'll add some of those glazed pecans to the top to decorate. Can't wait! 😋😋😋

When I make no bake pies. I take the almond flour in a skillet and brown the almond flour turns brown it makes a very nice crust. I make it when I make my key lime pie. Keto. So good.

@@PEPSIKERRyes! You can definitely do that! That's how I do my lemon dessert. I might not do it for a couple hours though, maybe an hour, because then you'll have to thaw it to get back to the cheesecake consistency. 😁

I take the pumpkin puree and put on paper towels and take 2 more paper towels and get the moisture out. Makes the cheesecake more solid and major difference in texture. I take the whipping cream and whip it then fold into the filling. Think I will give your whipping cream a shot when I try it in couple days. Thanks for sharing. New to your channel 🙂

Maybe I will try this next.. I made it the other day half the recipe so I had a smaller portion in the house.. I let it sit overnight and it was like a creamy thick soup.. but the flavor was on point.. My husband and I still enjoy it!!

@@wendypowell3908yep! I have used that one before and it does have a lot of liquid. With any of them, you could always drive them or use the salad spinner and get all the moisture out and it will just be a thicker texture 😁

Instead of freezing the filling in ramekins, you could pull out the little dessert bowls from the closet. Since it doesn't go in the oven, you won't damage your pretty dessert set. I think i will try this tomorrow.

When I was growing up in the South, my dad always planted a large garden. One year he planted pumplins. In the fall, we had an abondanxe of pumpkins. He tried every spice and additive that he could thinj of ro make pumpkin appetizing.. He gave up and never grew pumpkins again.. Growing pumpkins reequires a lot of garden space. He decided that garden space planted in peanuts and popcorn provided much more enjoyable fall treats without all the sugar and other additives needed to make pumpkin enjoyable. We didn't practice low carb back then.

My cousin modified your recipe some and made a no-bake key lime cheesecake for me the other day and I don't do keto or low carb. She replaced the cinnamon with nutmeg. Instead of pumpkin pie filling she used another pack of cream cheese. She omitted the pumpkin pie spice but kept the vanilla extract. She used a bunch of fresh Mexican limes, Mexican limes are the same thing as West Indian limes and key limes zested a bunch of them as well. "Authentic Florida Key Limes" cost $7 for a dozen limes, "Mexican limes" which are the exact same thing, she got on sale at the Hispanic grocery store 15 limes for $1... and that's in Florida prices! She said by using the extra pack of cream cheese it keeps the limes or sweetener from overpowering everything else. She used a little over 1/2 cup of fresh squeezed lime juice and a little over a tablespoon of the lime zest. It was definitely tart the way I like it. Here's a trick to getting the most juice out of those little suckers, stick a lime or lemon in the microwave for about 15 seconds before cutting and juicing and zesting. She has also made that same cheesecake with lemons as well as limes and has also made a lemon lime cheesecake. Also because she used Philadelphia brand cream cheese and BJ's Wholesale Club heavy whipping cream, those do not have binders and stabilizers and have very limited thickeners, she put in a little bit of xanthan gum but I'm sure you can also bloom some gelatin and add that to the filling.

@@southernketo Here's another Florida secret for you, nothing special about Ruskin tomatoes, it just means that they were grown and packed in Ruskin Florida, it's a little south of Tampa. They are just normal.salad tomatoes and Roma tomatoes so you don't need to pay four times the price for them since they are grown conventionally and not organically, the same goes with "strawberry city strawberries" It just means that they were picked and packed near Plant City Florida, a suburb of Tampa. The strawberries aren't any different from California strawberries.

❤If you forget to set your cream cheese out to soften..put hot water in your sink or bowl and put the pkgs in and they will soften pretty fast then dry off and cut the side off and squeeze out..easy❤praise the Lord Jesus ❤

Thank you! Once it sits in the fridge for 5 or 6 hours, it's pretty firm. When we first cut it, it hadn't been in the fridge that long. When I ate it, it is really firm. I'm sure the gelatin would definitely work great 😁

I’m not quite ready to embrace the Fall foods, but when I do this will be at the top of the dessert options! Do NOT tell my husband though, we have a running joke in our house about no-bake cheesecakes. He is the king of the NB cheescakes and I do love the one he makes with a chocolate crust, and topped with a few mandarin oranges. But any time he makes it I say “Its not a cheesecake…..you used a pie plate”. He knows I’m just teasing so he still lets me have some.

I haven't tested that, but I think you would need to add some additional fat in to get it to work right. Maybe a little melted butter?

Oh yeah! That would work great! Once it's refrigerated for 5 or 6 hours, it gets the cheesecake texture, though, not so much a mousse.

Absolutely! I have some in the freezer right now. It's not only good to save them to use later, but it will also keeps me from eating the whole thing 🤣 If you've got the silicone pans, you won't even have to line them. They pop right out

Hi there! The whole pie, using my exact ingredients is about 2400 calories, 40 grams net carbs, 230 grams of fat, and about 50 g protein. I would say 8 slices for me, but some do do smaller.
