Hope you're all doing as well as possible! It's been ages since I've come over here to say hey. I've been moving around a lot, and am finally settled.
Here's a creamy tomato soup and grilled cheese recipe. All plant-based, all kinds of delicious.

I've been on a tomato soup kick lately. To make it creamy I use blended soaked raw cashews which make it taste luscious and rich. I also use a dash of my homemade Worcestershire sauce, garlic, shallots or onions, red pepper flakes, olive oil and I bought a branch of Sicilian oregano. One tip that you might want to try are semi-dried cherry tomatoes. If you can't find them then you can make your own in the oven on a low setting. They really intensify in flavor and get sweet and are great to add to the soup to give it even more umami flavor. Not sure if people know this but tomatoes are one of the umami flavors in addition to mushrooms etc. My favorite cheese for the grilled cheese is from Miyoko's kitchen. She has a cheddar cheese and also a smoked cheddar cheese that's great in a sandwich. It's really tangy and salty almost like a feta.

I am sure it can be made without salt as well as with salt:). I am interested in the Vegan Grilled Cheese because I am lactose intolerant:)!! Thank you for sharing your delicious vegan recipes:)!! Love these style videos Anna. I myself ended up going off all animal meat as well as alcohol over 4 months ago. I don’t have much of an appetite these days so more then happy to eat a bowl of veg or salad. Been through a touch patch with my physical and mental Health, and unfortunately it’s taken away my joy of cooking which I’m determined to get back especially for my little ones

Oh wow, I had no idea you had a vegan vlog channel! I just came over from your ASMR channel. I just celebrated my 10 year veganniversary. I love a nice hot tomato soup. There's a brand called imagine that has an organic creamy tomato soup. They even have a low sodium version. It's only about $5 or so. I put nutritional yeast in it, fresh garlic(yummmm) herbs, etc.

I respect the vegan option, but it’s not suitable for me. Too many carbs in such diets. Carbs = sugar …and I have high colesterol, high blood pressure and other symptoms related to insulin resistance and metabolic syndrome, which many people suffer from without knowing.

I'm sorry you have so many health issues. Veganism can be done in many different ways, though. High carb is not the only option. This article highlights options for vegan diets when you have diabetes, as well as a study on how a vegan diet reduced IR in the participants: www.healthline.com/nutrition/vegan-diabetes If you're interested in trying it, you could always look into the vegan doctors who are creating plantbased diets to fit many different conditions, and obviously speak to your doc before making changes. But if you're not interested in trying veganism, that's ok too. xoxo
