Add ground bay leaf, dry ground basil and dry ground tarragon. This really wakes up this spice blend

Both Creole and Cajun seasoning blends enhance oven fried potato wedges and roasted corn, mixed into melted butter and brushed on afterwards. Lawrys Seasoned Salt will also work in a pinch.

Plus the Store bought Creole stuff is loaded with to much Salt,? Not good if your a Diabetic & have HB Pressure,? Mixing your own,? You can adjust or leave out the Salt.? Emeril's is a Great Seasoning. Mix.?

You can add just 1/3 of the salt or leave it out fully. You can add salt later on on the dish.

Whenever I've used cayenne, when the recipe calls for a little bit, I whomp it with a nuclear bomb. Just personal taste. I love it.

Does the black pepper absolutely have to be ground or can you use coarse black pepper?

In order to more fully blend all the ingredients, ground is preferable. But, if you don't mind the bigger bits of pepper, I say go for it. It may change the finished flavor a slight bit, though.

Can Cajun food be seasoned mildly hot? I would really like to try cooking Cajun style but I can't handle really HOT spicy food. Any suggestions will be helpful, and very much appreciated.

Reduce the amount of pepper to 3/4 to 1/2 of a teaspoon. Same thing as Cayenne, use half of it. It is pretty spicy for people not trained to eat that spicy. For us Mexicans this is just soft condiments ;) cheers

Kosher salt is not a traditional salt to use. In my opinion It's not even a good flavor enhancer. I'll stick with sea salt.

Just way too much salt for my taste. The major problem with creole and Cajun seasonings for me is the salt. When you are using Cajun sausage, a seafood stock, etc., they provide a good amount of salt already. If you need more salt, you can always add it later.....to taste. Fortunately there are some low salt type seasonings on the market, but even those have too much of it for me. I mean, some Cajun cooking has about 3x the daily requirement of salt you're supposed to get in a day, and it is so unnecessary. It kills off the taste of the other seasonings. It destroys the natural flavor of the stock. I don't get it.

I realize this comment is a year old but... If you are using store bought stock you can either by reduced sodium version or cut the amount of salt in the recipe. Or... You can make your own stocks and leave the salt out.

Matt I agree. Not only in this but always too much salt in food. I don't like salty food and it also makes me sick.
