Thank you so much for this. My mum used to make crumpets on Sunday afternoons and we’d sit with a pot of tea to chat and scoff them. She made them the way her baker father had - traditionally english and perfect. My mum died when I was young, and she was far too young, and that was one of the many recipes there wasn’t enough time left to learn from her. I have her rings and her teapot. Hi, this is my 2nd comment on this video. Just wanted to inform you that I've followed this recipe and the mixing method, and achieved the Warburton's holey characteristics. The texture was so puffy, fluffy and chewy. The key is not only the ingredients and mixing method, but the cooking method is a bit tricky. I tried cooking them two different ways: in crumpet rings on a skillet; and in a small, single, individual non-stick pan for which I could control the heat. The latter allowed my crumpets to produce lots of holes on the surface (while the 1st cooking method yielded a failure). I used high heat for the first 20-30 seconds to let it form as many holes, then reduced to low. To preserve the prominent-looking holes, I didn't flip, but blow-torched them (unflipped). There I got the unbeatable crumpets, the texture of which was like that of a honeycomb. Other than with butter and honey, I also like my crumpets with sweet condensed milk (alone or with butter) on them. Thank you again so much for sharing the secrets.

If you look at the Warburtons video, they never flip the crumpets. They just run them under an Industrial salamander to get a bit of gold on the other side. I’ve tried flipping them and unless they’re bone try on top, any moist batter fills the holes.

high heat idea is interesting indeed! I'm on round three over the last two days of failures and i'm following t hings exactly but damn, massive burnt failures haha. I really don't get it but I suspect it has something to do with my cooker's minimum heat not being low enough, or my pan being too thin (In lockdown so I can't buy anything more suitable). Argh so frustrating. But, i'll try the holey thing at least while using a steel dumbell weight as a 'hot plate' to raise the pan and reduce/spread the flame... Take four coming up urghhhh

i did mine in ramekins in an oven-style air fryer, 350f for 10 minutes. Heat the ramekins up for 5 minutes first, then slather butter inside and add the batter. soooo good.

I tried this recipe and came out very well. I have attempted to make crumpets 6 to 7 times using recipes from different sites but none of them were good. I incubated for an hour at room temperature because it’s 20 degrees and not 37 degrees. I did not mix the batter after fermentation, just scooped the it to the pan. Amazing!!! Thanks!!!😊

I just tried it. I last had them 20 years ago when I was working as a student in Scotland. Now I am back in Czech republic and keep telling my children about those strange little roundy delicous british something, I used to buy in Tesco for almost nothing and heat them up in a toastet. I doubled the dosage and they are gone. Tomorrow I will make them from 900 grams of flour and put them in a freezer. I sometimes still make full English. Using the thinnest nonstick pan I own worked best for me, it reacts more quickly to the temperature change when lowering the flame after the 1 1/ 2 minutes. I've also found that you really want to be spot on with that 1/4 cup when you fill the rings. Totally worth the effort , the more you make them, the better they turn out.

They have to be stored in the refrigerator or frozen. Unfortunately it’s a climate thing and the moist nature of crumpets lends them to developing mould. Even home made will do it if they are not stored properly.

Thanks Nagi: I would love to see Sydney cafes do these home made & piping hot even as a weekend special with a multitude of toppings. Even as someone raised by a foreign chef, I do not think we celebrate our own traditions enough. If this inspires more people to put them on menus, you should get all the credit. Tried it and its an excellent recipie. The success lies in order of preparation and temperature control; a short amount of high heat and long amount of low to medium heat. I have made crumpets with other recipies and they are definately not as good. I think its because the flour water and salt are mixed for a few minutes first to work gluten, then the yeast and other bits are added and just mixed for a few moments to combine whereas other recipies mix everything together in one go. For sure I will make these again.

Was trying to make these just receintly with the 1in rings vs the half inch rings, which makes thicker crumpets. My problem is, I am not cooking them in a castiron pan. I had one of those pancake griddles, and had it at about 375/400 F. I had them on their about 18 min and still the center is a bit doughy. I am guessing, the cast iron is a better idea, and what temp were you cooking at. It looked like you had an induction cooker there, which I also have. Thanks for any tips and I do love the Crumpet. Especially when made with the discard from your starter.

Nice! I bought a package of crumpets at a specialty grocery-deli and had no clue what to put on them. I went with butter and honey, so I guess I had the right idea! I never realized they were similar to a pancake. I always thought they were more like English muffins. I'll be making them from scratch next time!

I followed the recipe and measurement exactly, but really 150g flour with 200ml water does not give the batter's consistency in the video, mine turns out a bit like soggy crumbling. Not sure what did I miss here, seem no other choice than adding more water?

Ok, I am probably going to start a second Revolutionary War or perhaps WWIII, but I don't have crumpet rings, so I used this recipe, but I then committed what some may see as utter blasphemy. I put 6 ramekins in my oven-style air fryer at 350 for 5 minutes to get them good and hot, then slathered butter over the insides and divided the batter amongst them. 350degrees f for 10 minutes and mm mm mm mm mmmmmm.

I'm a Brit living in Germany ... Made Crumpets many, many times using a variety of recipes, thought i'd try this one as i love Warburtons crumpets ... Did everything exactly following the recipe and the result was virtually no holes and a slightly burnt bottom, tasted great though! The only difference to previous attempts was that this time I used an Induction Hob and a Cast Iron pan ... These hold the heat too well ... I'll try again using a conventional non stick pan.

I have to follow this recipe and resigned my membership to the FCCM (Failed Crumpet Cooks of Montana;-) I'll begetting an ice cream scooper since the batter turns out pretty sticky for me. Maybe I'll add more water on the next attempt to thin the batter a little. The crumpets come out holy on top already. I'm sure the difference is that I am at three and a half thousand feet above sea level. Or it could be a different gluten level in the flour? Anyway, I had some Watbirton's crumpets that I bought back from England 2 weeks ago to compare my results to :-) Not bad at all! There's hope for the FCCM!!

That is a proper crumpet recipe! Far too many KZbin recipes are almost devoid of proper bubbling on top and have the wrong ratio of ingredients. Yours looks great. Well done!

I'm guessing pan not hot enough. Think of pancakes; start with hot pan to make bubbles. Just slightly more height in ring than pancake (they rise)

This is the easiest video I saw for this recipe and I followed the instructions. Unfortunately, the yeast was cloggy when mixed with the water. I had to stir it for a long time. The crumpets didn't rise but were flat and didn't make bubbles on top. They also burnt at the bottom and the only one that didn't burn was because I added a lot oil in the pan to prevent the burning. The end result was flat crumpets that were uncooked in the middle and tasted of instant yeast. Advise please. Thank you.

You can't mix dry action yeast with water like normal yeast. Also you're cooking threm to hot, how did I know ...? Because yesterday I made the exact same mistakes as you, good luck with round two. Either switch yeast or add it dry. And turn the pan down.

Better yeast and a lower cooking temperature. Your pan also matters. Use what you have but experiment. My favorite stovetop bread skillet has that copper nonstick coating. I use silicone rings instead of metal ones.
