2-3 cups coconut milk
2 tbsp. minced garlic
1 hot pepper chopped
1 tsp. methi or fenugreek seeds
3 tbsp curry powder
1/4 cup chopped bandanya or green seasoning
1 small onion chopped
oil
1 tsp roasted geera | roasted cumin
addational water to cook
1 tsp baking powder - optional

Steam for 5 mins, place in zip lock then freeze.

Thank you for this recipe. I followed it exactly and it was foolproof. I had frozen already cleaned chataigne and it worked perfectly! Lunch is curried goat, chataigne, dahl and rice. Excellent videos, keep it up.

Great video Natasha as always. I oil my hands when i clean the chatigne because it helps keep the hands cleaner.

what can I say again Natasha you just the best thank you so much for the baking powder tip .what I would to like toknow though is how do I know when the chatigne is full enough to cook and the seeds are just right because I love the seeds so much and sometimes when preparing it is either the seeds are to young or to hard I like the seeds to be creamy along with flesh thank you have a wonderful weekend

it's hard to say because it can be small and have full seeds and it can be big and have young seeds, ive seen it all, I do know you need it to be a good size before you pick it not to small not too big. I will do some more research and get back to you. thank you and have a fab weekend.

Ymmy recipe, thank you for sharing! Guyanese call this one Katahar. The coconut milk makes it so creamy! Was my late grandmother's favorite.

amazing... I have just got a bunch of fallen of the tree breadnut and didn't know how to cook them. sadly it's all seeds and no flesh. so.. my question is... what did you do with the seeds that you peeled off?

hi natasha i viewed your dinner rolls was very impress on how they came out, but i'am concerned about the yeast since here in trinidad we the instant yeast could the instant be used just like how you did the instant yeast for the dinner rolls thanks

I always use baking powder in some off my meat ,but never though to add it in chataigne ...will try it next time I get tough chataigne.....

+Che Tmx the boiled seeds are from the ripe chataigne, similar taste like chestnut, the white ones are curried together with the flesh.

Yes the one she's referring to is the one with the blackish brown shell and you boil it in salt water. it's a little bigger than a governor plum or probably the same size. Haven't had any in over 16yrs since I've moved to the States

yess in vincy we usually the mature ones an take out the seeds an boil in salted water as well..best thing ever.....never knew u can do it like this.....memories growing up

No I think the baking soda takes away the taste from it you can just add more coconut milk and let I cook some more
