I got a dash mini bunt cake maker today. Made the chocolate one. I did add a little vanilla, a tsp of Mayo and some chocolate chips (kind of more like Joe Duff’s lava cake) topped it with some choc zero chocolate syrup. Who says you can’t have delicious treats on keto! Love your KZbin Steve!! 🥰

I think your official taste tester Courtney is darling! I may have to get a bundt maker when they are available. It is VERY difficult to cook for one (as you KNOW!) so the individual appliances and mug cakes truly appeal to me. Thank you for this video Steve.

Somehow, the comments on this video seemed to have turned into a referendum on my microwaving skills. 😄 The reason I prepared the mug cakes the way I did was because I was following the recipes/method used by Keto Connect and Joe Duff. I wasn't going to tamper with their recipes. Thus, I didn't cover the mug cakes or add any additional fat. Also, my microwave is relatively low power (900W), which is why I do mug cakes and mug breads for 90 seconds. FYI: the Dash Mini Bundt Maker is available at Target online: www.target.com/p/dash-mini-bundt-maker-aqua/-/A-80177942#lnk=sametab I got mine at a Kohl's department store. My hope is that these will show up on Amazon soon too, and then I will include a link for that.

So I got some Birch Benders brownies in a mug last year. Had good reviews on Amazon so I ordered a 12 pk. Still have 6 in the pantry and I gave a couple away to my Mom to try. Reason they’re still in the pantry is because they were so dry and the consistency was sawdusty. Well I got a dash Bundt maker and thought I would break it in trying out that Birch Bender brownie in a cup. HOLY MOLY DUDE! just like you and Courtney said, it’s way better as a Bundt-moist and cakey. My ketoish 8 yr old and non keto husband both gave thumbs ups. They won’t last long now since I got that new Dash Bundt maker.

Coconut flour is what made the cinnamon cake recipe so dry. It soaks up every bit of moisture. Slower cooking (bundt pan) will produce a more moist cake. Also, FYI, 15-16 drops = 1ml. (Minutia learned in nursing school.)

Great! Got my mini bunt cake just a few days ago from a large dept store locally off the shelf for only 12 bucks! Have like you been experimenting with some mug bread and microwave 90 second keto cake recipes so prevalent on KZbin . This little guy is great, you are exactly right ; much more moisture in the cake. Today for my lunch , Using a go to keto 90 second bread recipe , I baked it up sliced it added ham , course mustard and some good Wisconsin cheddar. It was as if I had a real bread hot ham and cheese. Moist, oh my! So delicious. Thanks so much Steve to you and Cortney.

The chocolate version is basically Dr Gundry's flourless choc cake - however you need to add 2 tablespoons of butter & 1/2 tsp vanilla. it's amazing!

it makes total sense that the microwave cakes would be drier than the ones cooked in the Dash Mini. Microwaves work by exciting water molecules in food to create heat, making for a higher rate of evaporation, you may find better results if the ramekin was loosely covered. The Dash is also an enclosed cooker, it is trapping in the steam to aid in cooking and only some steam is released from the sides. I've made microwave mug cake recipes in the oven with ramekins and very much preferred them, too! Thanks for another fun test video!

Well then, I expected a difference, but I didn't think that it would be that big of one. However, watching the video and considering how things generally turn out in the microwave, it's logical. To be fair, I've only had a mug cake 3 or 4 times and it had been a store bought, non-keto, gluten filled name brand. I under cooked them and let them rest for about 3 minutes, so they were light, moist and fluffy. I have the same issue with a lot of recipes that cook in the microwave, they're overdone! The JD recipe commenters suggested adding a T of butter and/or sour cream to combat dryness which really does help; it's my go to chocolate cake. Also, since the volume was halfed maybe lessening microwave time would also help. Agree about the Bocha Sweet.

That was interesting. I do find that most recipes call for too much microwave time for my tastes. I usually adjust so the recipe is closer to underdone than overdone so, I haven't really had a problem with dryness. However, I haven't tried the Joe Duff recipe, and it's been a while since I made the Keto Connect one. I'd agree with the baking powder and some of Keto Connect's earlier cake recipes. Matt was really skimpy on the baking powder when he first started out. He's improved a lot since they started, and newer recipes usually have more baking powder in them.

I contacted DASH and asked why they did not sell all of their products on their website and that some items were hard to find. Below is their response: Thank you for checking in. Certain products, like the Bundt and Southwest Griddle, are made exclusively for certain retailers and that is why you may not be able to find them at other retailers or on our website.

Even though the Dash mini Bundt maker isn't available here in Canada, I love seeing the comparison! So far all the microwave mug cake recipes I've ever tried have been dry, so this is an exciting discovery! I'm glad you're also going to experiment with the Dash sandwich maker; much as I love the aesthetics of the little Bundt cakes, the sandwich maker is readily available and more versatile.

It's very easy to 'over cook' a mug cake in the microwave and make them dry. I also find that any mug cake tastes way better the following day after sitting in an air tight container. I also make my chaffles and stuff in my snackwicher machine as you don't get mini waffle machines in my country and the triangle thing works great for us. We cut them open and add on what we want. 😉 At least I can use the machine for something now.

Hi Steve and Courtney, Thanks for the review. In my experience as well, the microwave mug cake recipes always come out dry. The only way I could get them down was to dunk them in some cream (as opposed to milk) to get some moisture in them. So I don't make mug cakes. Looking forward to seeing you soon.😋

I did go to Joe Duff's website and watched his video, but returned to yours to make the cake, since you were using the bundt maker as I was. You said you were doubling the recipe, so I halved the eggs and the almond flour, but after that I forgot and put all the same amounts you put in. (So twice the cocoa, twice the sweetner, twice the baking powder.) Oops. It turned out delicious. I had about a tablespoon of batter leftover. Much better than a mug cake, because the bottom gets cooked well too, instead of just steamed.

In my pre-Keto days, I bought the book Mug Cakes by Leslie Bilderback. Most of the recipes require 90-180 seconds. I never had any problems with my cakes being dry and I probably cooked them ~120 seconds. Some were flourless too. Post-Keto, the book is still on my shelf because I don't know how to keto them. Funnily enough, someone gave me a sandwich maker as a gift and I gave it away because it was too greasy ... Your daughter has a sweet tooth but doesn't shy away from Keto "sugar", so I like to hear her comments on things. TFS, Nicole

This was fantastic! I just felt like the bundt maker would win hands down. Although mug cakes are quicker, I would rather wait the 8 minutes for a real cake texture. I am just not totally sold on the texture of mug cakes. Great video 👍🏾

Hi Steve. Since going low carb, then keto 5 years ago, I find (and tweak) recipes to our liking. Then make up the dry ingredients in individual zip lock bags. Making mug cakes or chaffles or chilli or whatever is really easy as I just grab the mix/seasoning bag and add the fresh/wet stuff. Takes no time.

I have never tried a mug cake because they always looked a bit unappetizing to me...I wonder if that cinnamon one would have turned out b with almond instead of coconut flour. At any rate, the bundt version is the clear winner, and small enough to travel. And just the idea of something that looks like a donut! Bravo, Steve, another great video!

I don't know what recipe you're using but I discovered that eggs make terrible mug cakes. Find a recipe with no eggs and i use coconut oil instead of butter and they come out great every time.

@@athena61 I don't even measure the ingredients any more because I make them so often but heres the measurements until you get used to making it: Chocolate mug cake 1/4 cup sugar 1/4 cup flour 2 tbsp unsweetened cocoa powder 1/8 tsp baking powder 1/8 tsp salt 1/4 cup + 1 tbsp milk 2 tbsp oil (i use coconut oil) Chocolate chips or nuts if desired Stir your dry ingredients then add the liquids and stir out the lumps and stir in any chips or nuts. Microwave for about a 70 seconds but remember the most important thing is not to over cook it, so after a minute you might stop and check it. If its too wet, do a little more time (like 5 seconds). It shouldn't appear bone dry in the center and if you touch it may even seem a little soft in the center. You can use less sugar, you'll adjust to your own taste as you make more. Now I eyeball the ingredients and its always good. Happy mug cake!

I used to work at a restaurant that made ramekin cakes every day. They weren’t sugar free at all, but were flourless. The trick was to bake them in a water bath (maybe 1”) in the oven. It’s more work than a microwave but if you want better results it’s worth it, plus you can make a bunch at once it you are making a lot.

The flour that I like the best for baking a mug cake, is the Trim Healthy Mama baking blend. It is a mix of oat fiber, coconut flour, flax meal, collagen peptides, almond flour and glucomannan. They turn out moist and delicious using 3 tablespoons.

When you did his recipe you deleted the butter which is very important and that’s why I think the cake turned out right on this video!! Hold for a half a tablespoon for one egg and sent you double dirt it needed a whole tablespoon of melted butter. I did watch your video a couple times just to make sure, and if you double check you’ll see that you accidentally forgot to add a the butter!!

Hmmm.... I didn't see the butter anywhere in his video that I linked to and it's not listed in the recipe in his description. I wonder if we're looking at the same video?

Serious Keto Hi STEVE! Thanks for replying so quickly STEVE. I’m sorry I confused you, but I was a little confused myself when looking into videos concerning the Butter!! Evidently it was the whole cake recipe I was looking on and he added 2 1/2 tablespoons melted coconut oil. (are used 2 1/2 tablespoons of melted butter)!! That’s what I made! Because it’s easier for me needing a few of “something” at a time!! However, I’d like to say for myself, in making the mug cake, I’d automatically add either butter, coconut oil or cream cheese for smooth texture! I also for myself, go on the side of caution with the microwave & undercooked rather than just go longer!! I also noticed that Joe has a couple of different recipes for the chocolate mug cake!! The most recent one is drastically different, in this newer one He also uses one scoop of chocolate Isopure whey powder!! As Keto grows, all good chefs are always trying to make things better, tastier & healthier!! God bless you on your journey! I’m a lifelong fan & always enjoy what you have going on!!

I have found that the microwave boils away the moisture (literally) too quickly which is what causes the dense/dry texture. This applies to most 'bread-like' substances. The Dash is 'cooking' the moisture into the dry ingredients, just like an oven. :) I will definitely have to try one of those little bundt makers out (except they are now impossible to find.... boo!)

I believe the mechanism of heating in a microwave heats the water molecules with radiation. The bundt cake maker would be using resistant conduction from the surface into everything. I'm also thinking there's an enclosed volume factor. Having something on top of the ramekin might help.

I like the triangle sandwich Maker because you can make. Spaghetti.. And then butter 2 pieces of bread and put some garlic salt on it. And make a spaghetti pocket. And the bread is garlic bread. Sometimes we make. Ramen noodles And add spaghetti sauce... You can also put a little bit of mozzarella cheese inside the sandwich with the spaghetti

I do want to get a mini bundt cake maker, but until then, I learned to add one extra egg to the only mug cake recipe I have (a cinnamon mug cake found on Pinterest, and which took some tweaking to make it worthwhile. I don't recall who made it/pinned it, and I can no longer find it there). The extra egg, besides adding moisture, is also part of my protein for that meal, as well as some needed fat, so I'm fine with adding one more cluck fruit.

Now I'm interested in the bundt maker :-) Didn't see an appeal before, but it looks like it solves the issue of the microwave drying out mug cakes. It's not microwave quick, but still quick enough for me. Plus, "Time To Make The Donuts" :-)
