As a soup lover (especially noodle soup) the lasagne soup is such an easy and lazy but great recipe to cook when you don't have the patience to wait for it to bake in the oven while all the great aromas are just clouding your kitchen and you just get even hungrier bc for the soup you can still snack on it while it cooks

@@roygolan99 I mean it does taste like a normal lasagne in my opinion. but i think if you want that cheese crunch that you normally would have if you would make it in the oven, then maybe you could grill the cheese like for the cheese pickle blanket and then add them to the soup like croutons

The biggest thing with the chocolate noodles (from what I've learned in a molecular gastronomy class) is the use of agar rather than gelatin, agar dissolves at a higher temperature and needs to be heated to get it to thicken where gelatin can be bloomed and set at a much lower temperature which makes it more unstable. Agar is more solid at room temperature and has more of a chewy consistency rather than gelatin which is bouncy and soft. If you were to try it again even with a different flavor choice (I've made vanilla noodles which is essentially a pannacotta in noodle form) I'd highly suggest agar! Also, if you search online molecular gastronomy noodles there are more useful pages/videos to browse. 😁

I'm not surprised that the pickle cheese combo was good. One of my guilty pleasures is a sandwich with white bread, butter, a slice of any kind of cheese that I have, and some pickles.

Yuck 🤢 it’s greasy is the only thing that I can’t stand i have had this I think I was at a burger joint and I had a whole pickle on my burger instead of sliced pickles the cheese was kind of crisp and burnt for some reason and the pickle was cut into longer slice in stead of ur small circle slice I basically already had this but on a burger without ranch or wrapped in the cheese lol

"Did this come from a city with a surplus of cheese and pickles?" funny you said that, because being by a surplus of pickles is how fried pickles were invented in ARKANSAS! First created in the summer of 1963 by the late Bernell Austin who owned the Duchess Drive-in. Austin's son David Smith said, "He thought, well there's got to be a way to cash in on that pickle. Of course this is the south, where did it go? In the deep-fryer." Genius move. The idea was originally a gimmick to drum-up business for the drive-in that was located across the highway from the Atkins Pickle Company, but from there it just became a Southern staple once it got popular at festivals. Although the drive-in closed in the late 60s, you can still get the fried pickle made with the original recipe (only his family know the recipe) at the Picklefest held annually in Atkins, Arkansas!

David, the pickles you picked are a fermented pickle vs. a brined pickle. That's why it smelled so funky. Fermented foods are funky. Think kimchi and sauerkraut but in pickle form.

it's just heating vinegar. Any time you heat vinegar it smells funky, especially dill infused vinegar.

My guess would be to heat the tubing enough to let the tubing loosen around the noodles, run under some hot water for 30 seconds, but that's just my guess,it would be rough though no matter what

@@lyrica_overdose matter tends to expand as it heats. If it was an empty tube in really, really hot water, the plastic would soften until it sort of defofmed in on itself, but it wouldn't shrink straight up.

*THANK YOU!* I personally *LOVE* lasagna with a layer of ricotta. I don't care if béchamel is more traditional. Some traditions are stupid. I grew up eating lasagna with ricotta, and the ricotta is my favorite part.

One of my favorite sandwiches growing up was a basic crispy grilled cheese with 4 dill pickle chips! There's also a pretty popular snack recipe where you just put cheddar cheese in the bottoms of a mini muffin tin, then add a dill pickle chip/slice to each and then bake it til it gets crispy. Suuuper good.

The "compressor noodle shot" really cracked me up! 🤣🤣🤣 I am completely with you, I hate gelatine, too, and therefore would suggest to always replace it with agar-agar. The dosage is slightly different, but since you were working without a recipe, it doesn't matter that much, imo. The inside of the (much shorter!) tube in the tik-tok might have been slightly greased, otherwise there's no chance to get these noodles out. And, last but not least: Why? You can easily make chocolate noodles by hand, and they'll be fantastic! 😋

When you make a mold out of any gelatin you have to soak the container in hot water for a few minutes then it should come right out.

I thought the chocolate noodles would be actual noodles but with added coco powder. The lasagna soup might be something I’d try to make, but in my home kitchen not my apartment which is too small and under equipped.

My husband saw the original video where he's squirting the noodles out of the tubes. The refraction of light through the tubes makes me think that there's water in the tubes not air, which makes sense because water cannot be compressed so, it should have even pressure when pushing the noodles out.

I made similar noodles myself a few years ago, it's based on molecular cooking and instead of gelatine you use Agar, with that it dose not stick to the tubing, if you want to try it again sometime

Watching you try to un-constipate those noodles had me ROLLING. As soon as you got the compressed air my friend muttered, “Oh no, that’s not gonna do what you think it’s gonna do” I might have dunked the tubing in some warm water before trying to get them out, but man… I’d pay GOOD money to see the uncut footage of that one.

I saw lasagna soup on a mommy blog some years ago and now it's a regular in our house. Lasagna is my favorite food, so I love having an easier alternative to make with more regularity. But I do only add the cheese after plating, like the original recipe had recommended, for the exact reason you pointed out

I forgot to mention. I've been using the fried cheese discs as a replacement for tortillas-crackers-pita. We call them Crunchy Cheese (in English so it sounds exotic hahaha) It helps on my low carb diet. luckily there aren't a lot of European pickles here in southern mexico, so I don't have to deal with that part of the dish. I do like chinese pickled veggies.

I'm not saying make a video out of it, but Brian Lagerstrom's lasagna with fresh homemade ricotta is the best lasagna I've ever had. Absolutely worth the effort. You should give it a shot.

Haven't made the lasagna, but I regularly make my own ricotta, thanks to Bri!! It's so much better than store-bought, and so easy. Glad I saw his ravioli video and learned how to do it!

I don’t know who’s been making lasagna with a Béchamel sauce, but that’s *not* Italian and I am. Ricotta all the way! I get mine from the Italian market not far from my house. As for that lasagna soup, I’ve been eyeing that for a while now. Personally I’ll use the mini lasagna noodles. I use them when I make skillet lasagna too. So much easier than breaking lasagna sheets. Now about those noodles… I don’t think I’ve laughed that hard at a cooking video ever! I completely lost it when you brought in the air compressor! 😂😂😂

So ive delved into molecular gastronomy with thoose weird noodles. I did a strawberry noodle for my collage final. Lmao. I usually use agar for noodles. They give a higher resistance. Easier to push out. Probably need to adjust your cream to chocolate ratio. With that amount your looking more of a cream sauce not a heavy chocolate. With chocolate you probably need to give a light heat before getting them out as well. But overall you were close!

Maybe for the chocolate noodles the noodles were frozen briefly (like 10 mins) in the hose, then the hose was dipped in hot water to loosen? Like Popsicles get released from mold when you run under hot water....

I love lasagna soup! I do it with cream not Alfredo sauce and the family including little all eat it. 💜 you are very right the ricotta totally makes it sooo good!

I think you're right, re: agar in the mixture, as well as reducing the amount of milk/cream. Zach's noodle liquid looked more ganache-like before it set. And, I wonder if he oiled his tubes before injecting the cooled mixture into them... Hmm. I'm sorry they didn't turn out as well as hoped. I do think the lasagna soup looks great, and the cheesy pickles is a hair away from a "fried pickle": if you wrapped one pickle slice fully in the cheese (around and both tips), it would be a true winner. Thanks again, David, for the food tests!

I think you're supposed to blow out the noodles while a portion of the tube is laid in the ice bath so that what comes out is still warm enough to be pliable but also cold enough to stay firm

Your issue with the noodles is probably the tubing. It's way too thick walled, it needs to be more flexible and expandable so air can get around the noodles to minimize friction.

Just dunk the tubes briefly in hot water. The gelatin adhered to the inner walls, so you need to warm up the outside to get it to release.

To everyone mentioning how interested they are in trying the lasagna soup, I really recommend checking out Half Baked Harvest’s lasagna soup recipe online! It’s workflow makes a ton more sense, and it’s really foolproof. We’ve made it dozens of times with no issue, and it’s always amazing!

Pretty sure the chocolate noodles were made while the mixture was still warmish. That's why they were blown into a bowl of ice water when he did them so they firmed up instantly instead of freezing them inside the tube like you did.

1. In the South, there's a thing we do with pickles (can't think of what it's called, right now) where we take a tortilla, put cream cheese on that, put shredded cheese on that, and a pickle in the middle. You wrap it up like a burrito and eat it. You can heat it up or eat it cold, either is fine. 2. You can make the lasagna soup in a crock pot. It's just meh, personally. I've done it quite a few times since it's quick and easy and my kids do seem to like it. My middle child was even requesting it every week there for a few months. 3. I don't like chocolate (please don't come for me, I really just don't like it), so I immediately went 'gag' to this recipe. It also seems like there should be an easier way to make chocolate noodles, but again, don't like chocolate.

The cheese and pickles is a straight up drunk snack, it's up there with cup of noodles and Tabasco sauce, and it's probably better with regular dill pickles instead of pickles fermented in garlic juice like yours were.

There was a Mexican restaurant in my area that died early in the pandemic that used to do tacos with cheese on the grill like that. Theirs put the cheese/meat filling in a tortilla, but I don't understand why other Mexican restaurants don't also do it, with a tortilla or with the tortilla as a substitute.

I'm sorry, but those chocolate noodles looked as if a rat had explosive diarrhea on a plate 😂 Pretty sure there were some fancy chemicals or some extra steps off camera in the original video

for the chocolate noodle why dont you use straw that is the easy way... here in indonesia we call it warm chocolate jelly
