About the chicken in the first "dish": The texture you're describing is probably from not letting the chicken de-thaw properly before cooking. Because it wasn't thoroughly thawed out overnight, the water from the ice stayed in the chicken, making it feel soggy. I also wouldn't be surprised if the smell was from the added hormones or preservatives, since unfortunately a lot of processed meat manufacturers do that.
