Bien entendu, l'idée de faire vieillir davantage la viande est récemment devenue populaire au Japon. L'Ikejime est une technique originaire du Japon qui tue instantanément le cerveau ou la moelle épinière du poisson, tout en préservant sa fraîcheur. D'un point de vue scientifique, il s'agit d'une méthode plus humaine que la congélation dans la glace et la mort lente du poisson. D'ailleurs, le mouvement du poisson qui subsiste après l'ikejime (cerveau-jime) est dû à des spasmes musculaires. Les idées religieuses ne sont pas prises en compte ici.

@stéphane ROUSSEAU I speak French but I cant write it well at all so I will write English and hope someone translates. No. The fish is not alive. It is killed instantly by the butcher with a cut to the brain and spinal column. The spasms are just nerve spasms and actually can be activated in any freshly killed animal with lemon juice or sodium sprinkled on enervated muscle. The chemicals in the lemon juice or sodium act on the nerves (since they havent broken down because the being just died) and cause them to fire, contracting the muscles. Lemon juice/salt mixes are sprinkled on very high end raw seafood dishes when its brought to the table where I live to show how fresh it is. And I dont live in Asia. Unless you are vegetarian, you have no business complaining. I can assure you any meat you eat you get in a grocery store suffered far worse and was treated with much less respectful skill than this butcher treated this fish.
but they let hang eel leed out alive for 30 min before killing it. i dont mind eating fish meet but it should be humane as possible for al living things
That was a wonderful presentation. Music worked well. Its was a nice crescendo to the table. I just kept thinking, its what i want for dinner... oh well.. 👍
