This is similar to Vietnamese 🇻🇳 used fish🐟 sauce for dipping not soy sauce dipping.

Nope. The dipping sauce should not taste sweet at all. But some people add sugar to everything because they prefer a sweet taste.

interesting, worth investigating, would have to make batter from scratch here in Serbia, there's no way I'm paying 50$ for shipping of something I probably can fix up in my kitchen. but, I would assume you can't put literally any veggie inside, like, zucchini for example would melt down and ruin the entire thing? also, do veggies have to be in such large chunks or do people adjust it based on their personal preferences? I know I can adjust it, I'm asking, like, what's customary?

As noted in the video, the pancake powder mix recipe is in the description box, if u want to make it from scratch. Yes, we use zucchini to make pancakes, too. You just have to cook it fast so the water from the zucchini isn't released into the pancake (when you cook it for too long, that is when the zucchini gets soggy and releases a lot of its liquid. Yes, we Korean make many variations of pancakes, using many different kinds of vegetables and meats. I have more Korean pancake recipes on my channel.
