Thanks doc! So many ways of eating unappealing vegetables. I live in india so bitter melon is commonly found in the market. I make my bitter melon by roasting the slices with salt and adding a bit oil I fry it till they are slightly crispy I add crushed roasted peanuts or sometimes exclude the peanuts with juice of tamarind and it turn out so tasty and crispy.

In May of '21 I had bloodwork done and found out my a1c was over 12%. In July of '21, I got it to 7.7%. In October of '21, it was 5.5%, and just last week, 5.9%. I have a spinal cord issue (5 fused vertabrae in my neck, and other surgeries still needed). I can't excercise due to the spine, so I hard reset my diet to include everything the doctor mentioned in this video, and that's how I got that a1c down. Simply put: roast just about any veg in the world for 20 minutes at 350 degrees with salt, pepper and olive oil on it and you'll like it. Add them to lean chicken, most fish, and the occasional steak and you'll see improved numbers, as long as you keep staying away from the known bad stuff.

I sometimes find at Walmart in Southern Fl. If you remove the inside where the seeds are located, ( using a small spoon ) and soak in salted water for maybe 1/2 hour it will not be as bitter. I used to do this, but I am now accustom to the bitterness and prefer it that way. The bitterness might be what is helpful for diabetes. Chinese black bean sauce, oyster sauce, low sodium Soy Sauce in combination are good seasonings to hide the bitterness.

Making veggies “half your plate” is the biggest challenge to me since there are so many that I don’t like. I make a lot of soups to get my veggies, and put spinach in everything I can (my breakfast eggs have at least a cup of spinach). Meal planning can be depressing…as a picky eater, it’s hard to find healthy choices that I’ll actually eat, let alone enjoy. (And yet, I do have my diabetes under control, and all my labs are good. It’s just hard, because I’m a carb lover at heart 🤷♀️)

I have a quick and delicious way to enjoy veggies. Cook them and then put them in a high-speed blender with water, olive oil, whipping cream, fatty dark meat chicken, and herbs. A delicious smooth soup. You can even soup cooked red potatoes with the skins. My blood sugar used to be 2O.6 after a 24 hour dry fast and now my blood sugar is now down to 5.7 (x by 18 for us numbers) when I woke up (just 14 hours between supper and waking up - yes I enjoyed really sleeping in). Hopes this helps someone. I eat a moderate fat diet; high in salt and potassium chloride, plus 8O to 12O grams of protein, plus less than 1OO grams of carbs per day.

I'm 63 years old and 5 feet tall. Three days ago I started a low-carb diet with Intermittent Fasting (16 hrs fasting, 8 hrs eating... everyday) taking 1 capsule of 4,700 mg Berberine, Ceylon Cinnamon, and Turmeric combined. I have lost 5 lbs. (I now weigh 315 lbs). My big question is this... may I drink water during my fasting hours? Please bear in mind that I am pre-diabetic with an A1C of 6.0 and I tend to need water at all times, I find. I have been drinking water during my nightly fast but please advise. This is very important. Thank you. BTW, on sub sandwiches I use baby spinach instead of lettuce. I'm so tired of eating lettuce and spinach actually tastes good. I think it's a healthy exchange.

I like most of the veggies on this list and eat them as staples in my diet. I haven't had bitter melon because it isn't avairin my area though I've heard of it once or twice. I'd like to try it just to see if I like it, but can't do that right now. I've heard of that eggplant dish you mentioned, but haven't had tge chance to try it though if I can learn to make it that would be easier. Tradishinal ethnic dishes I'm wary of making because I dont want to muck it up. Things like that only taste right when made by someone who knows what they are doing, or are being made by someone being taught by someone who knows how to make it right. A lot of ethnic dishes I haven't a clue, or have anyone to teach me to make them. That's why I steer clear for them most part. It's out of respect for the dish and the culture it comes from and wanting to try authentic not a version made by me not knowing squat. Leafy greens are a major staple in my diet because of me having hereditary anemia. Btw, lately on my veggies I've found that instead of sticking to just salt pepper and garlic to season, if I add other spices and maybe a bit of home made broth or meat drippings it does wonders. The 3 extra spices I add in American cuisine are best known in sweets, but are actually pretty good in savory dishes and help with appitite and blood sugar control. Those are ginger, cinnamon, and nutmeg. I also sometimes add a touch of ceyanne pepper. I started adding these spices when I got a nasty sinus infection last month from allergies and freezing cold with sleet and running errands out in it on the bus. Those spices were one of the tools I used to fight it off. And no, I don't measure, it's strictly to taste. Ive never cooked with shallots, though I don't have a prob with them other than price. I prefer to go with onions, especially red onions instead. I never buy white onions, though I do buy red, yellow, and green onions. I also buy leeks on occasion. As for red peppers, I love those, especially red bell peppers. I rarely buy red bell peppers because of price, but prefer to grow them instead. Peppers and tomatoes are super easy to grow here. Though, if the Sumner heats too nasty the production sucks. Lasr summer was a prime example of that here in tx. Even commercial growers had production probs last year from the heat. I'm not the biggest fan of tomatoes in raw form. It's a flavor thing. My go to tomatoes are grape, cherry, or heirloom. Those are ones I like both raw and cooked. My mom is from west Virginia and told me that back on the family farm as a child visiting in the summers raw tomatoes with a touch of salt and pepper were a staple at the breakfast table. I've actually tried it and it's really good. I've done it for her once or twice when I was living with her and my step-dad as an adult as part of her breakfast for mothers day or her b'day. Her childhood was filled with horrors as was mine, but that dish is part of her happy childhood memories and she hadn't had it at breakfast since she was a kid. She and I don't have a good relationship, but when I eas still trying to get that close mother daughter relationship because I didn't want to admit jow toxic she was, I took parts of her childhood stories to try to make her happy. She as a small child had a stuffed black Lamb that a agressive neighbors dog shredded. It was her security blanket as a small child and it's destruction always haunted her since it was never replaced and was unrepairable. Once at a local toy store I saw a black stuffed Lamb. I bought it for her. I knew it would look nothing like the one she lost, but I figured having a new one bought out of love might help her heal and move forward. I gave it as a moms day present. It was a total suprise and she cried in both sadness and joy. I may not like my mom at all, and on many levels I hate her after the things she's done. But I still care and love her too, and I remeber those stories she told me because they are important to her and often involved good family members I never got to meet. It's a way for me to be tied to them and honor and remember them. Good people shouldnt be easily forgotten, even after passing on. Anywho, I though those seasoning ideas should be mentioned. Btw, I make a mean eggplant lasagne with meatsauce. Also, I recently made my own spaghetti sauce with heirloom tomatoes and canned it for my stockpile. It was supet simple and would love to share to anyone interested. It was a way for me to have spaghetti sauce free of added sugars and omega 6 fats like soy oil, canola oil, or sunflower oil. I know sunflower oil for most people is OK in moderation, but I have a autoimmune disease so steering clear of foids with inflamitory responses is kinda important if I want to get healthy. Thing is, most store bought sauces in my area are full of those oils, and maybe added sugars. I'm figuring learning to make my own would be the better option. If I can them, then I've got them made in advance for when I need them at a lower cost with better quality ingredients

Who said you can not have a sweet potatoe I do in moderation twice a week rub small amt. of oil prefer coconut oil or virgin olive oil optional: steam or bake you a small size wrap in aluminum foil top with cinnamon powder though there could be some significant spike but the carbs during the week evens itself out your plate should have some form of carbs to balance your meals or you probably won't feel full your a1c check in 3 most should be average range if you limit the amt. of starches a sweet potatoe is always a better choice over white potatoes and rice.
