Japanese Mountain Yam + Ladies's Finger served with Tofu & Soba Noodle
Yamaimo to Okura no Hiyayakko & Soba
Season 3 - Episode 2
[ 2 Servings ]
[ Ingredients ]
Japanese mountain yam ( Yama imo ) - 10cm
Ladies' finger - 6 stalks
Silk tofu - 1 box
Soba noodle - 2 springs
Dashi - 50cc

Shredded seaweed ( Nori ) - some
[ Wasabi Soy Dressing ]
Mirin - 1 tablespoon
Soy sauce - 1 tablespoon
Wasabi - 1/4 teaspoon
[ Method ]
1. Japanese mountain yam peeled, cut into small pieces & put into plastic bag beat until puree.
2. Shave off the thin layer stem from ladies' finger, sprinkle some salt & roll it to remove the fuzziness on cutting board.
3. Shock into ice bath after blanched.
4. Drain off the excess water with kitchen paper or gauze & finely diced.
5. Mixed well all the Wasabi Soy Dressing ingredients.
6. Use soup spoon dig out the silk tofu & place into a serving bowl.
7. Pour pureed yam over the tofu & soba noodle, add diced ladies' finger, drizzle some wasabi soy dressing & is done ~ !
