There are grout saws for repair work on grout lines they work well to clean grout lines as well

What happen if i don’t apply sealant on the grout?

The sealer helps the grout last longer. It protects it from moisture, dirt, mildew and day to day wear.

Why the alternate direction?

that just helps to adequately fill the entire void. It will also create a better result because the pressure of the grout float tool skimming across from different directions presses the grout into the void more fully and it makes more sense that way rather than bringing all the grout back around to keep doing it from one direction
